One-Pan Tamale Pie Recipe
Ingredients
- 1 (16 ounce) package sweet cornbread mix (such as Martha White)
- cup milk
- 1 egg
- 2 pounds extra-lean ground beef
- 1 small onion, diced
- 1 jalapeno pepper, minced, or more to taste
- 1 (8 ounce) can enchilada sauce
- 1 cup chunky salsa
- 1 cup frozen corn
- teaspoon ground chipotle pepper
- cup shredded Cheddar cheese
Directions
Step 1: Preheat the oven to 350F (175C).
Step 2: In a bowl, combine the cornbread mix, milk, and egg. Stir until the batter is smooth and set aside.
Step 3: In a large oven-proof skillet, cook the ground beef, diced onion, and minced jalapeno pepper over medium heat. Stir occasionally, and cook for about 5 minutes until the beef is browned.
Step 4: Add the enchilada sauce, salsa, frozen corn, and chipotle pepper to the skillet. Stir the mixture and heat through for another 5 minutes.
Step 5: Pour the prepared cornbread batter over the beef mixture in the skillet, spreading it evenly.
Step 6: Place the skillet in the preheated oven and bake for 40 minutes, or until the top is golden brown.
Step 7: Remove from the oven and sprinkle shredded Cheddar cheese over the top. Return to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
Step 8: Let the dish sit for 10 to 15 minutes before serving, allowing it to set and cool slightly.
Cook's Note:
You can use your choice of shredded cheese for topping.
