Origin and History
The dish "Gravy Baked Pork Chops" is a classic American comfort food that has its roots deeply embedded in Southern and Midwestern home cooking traditions. This hearty and flavorful dish is often associated with family dinners and Sunday gatherings, where easy-to-make recipes that are both satisfying and delicious are highly valued. Pork chops, a staple in American kitchens due to their affordability and versatility, are paired with a rich gravy made from ingredients such as cream of mushroom soup, milk, and seasoning, creating a comforting meal loved by many. Though the specific origins of gravy-baked pork chops are not well-documented, this style of cooking is likely influenced by the widespread use of simple, canned ingredients in American kitchens during the mid-20th century. It is a dish that reflects the practical yet flavorful approach to home cooking prevalent during that time.
Regional Variations
While the basic recipe for Gravy Baked Pork Chops is consistent across the United States, there are notable regional variations in how the dish is prepared and served. In the South, for example, pork chops are sometimes coated in a seasoned flour mixture before browning, creating a crispy crust that adds texture to the dish. In the Midwest, the use of canned cream of mushroom soup is especially popular, with some adding sour cream or other creamy ingredients for richness. In other regions, variations include the addition of garlic, onion, or even jalapeos for an extra kick. The side dishes also vary regionally, with mashed potatoes, rice, or biscuits often served alongside to soak up the delicious gravy.
Comparison with Similar Dishes
Gravy Baked Pork Chops may seem similar to other baked pork chop recipes, but what sets it apart is the simplicity and flavor of the gravy. While other recipes might use traditional gravies or sauces made from scratch, this version relies on the creamy consistency of canned soup, making it quicker to prepare without compromising on taste. Unlike recipes that require marinating or slow-cooking, this dish is baked at a relatively high temperature (350F) for a shorter time, which helps to lock in moisture and tenderness. Compared to fried pork chops, Gravy Baked Pork Chops also offer a more indulgent and hearty option, making it ideal for a comforting, filling meal.

WOW. Can I give it ten stars? Reviewers said it needed a bit of perking up so I fiddled just a tad. The sauted chops were topped with an onion slice. I added a package of pork gravy mix and a cup of water to the soup, and some Old Bay and onion powder, then poured it over the chops to bake. You could cut them with a fork, and we were licking the bones to get the last of the gravy. Absolutely the best baked pork chops I've ever had, this is definitely going in our rotation.

Recipe is pretty good base to start from. Even better with sauteed mushrooms, onions, and Tbs. of Worcestire sauce added into the sauce. Just be sure to adjust your salt accordingly as the Worcestire is plenty salty in itself. Additionally, 4 or 5 potatoes thinly sliced then sauteed in tbs. butter for a few mins. with Tbs. or so of fresh chopped parsley and tsp. or so minced garlic.... then layer these on the bottom of your greased casserole before adding the chops. Increase the milk in this recipe to 1 and 1/4 cups to accomodate for the potato addition and pour over chops and potatoes. Cover, then bake for 30 mins. Remove cover and continue baking until potatoes are done to fork tender (approx. additional 15-20 mins.) You could also shake n' bake your pork chops prior to browning for an additional flare. Sprinkle dish with remaining bread crumbs or shake n' bake mixture for some crunchiness. Serves great with steamed fresh green beans or asparagus and a loaf of fresh bread or dinner rolls. This is an easy yet wonderfully tasty comfort meal. And the recipe is flexible enough for adjusting to your own family's tastes and tradition. Fast and troublefree enough to make during a busy weeknight that tastes like you've been slaving at the stove for hours. Definitely a keeper for the recipe box. Would also work well with chicken breasts.

This is how I usually make my pork chops, except for a few changes. Instead of the water, I add in a jar of pork gravy (store bought with lower sodium), a can of mushrooms, finely diced onion and a little bit of butter... just at the end to "finish off" the gravy. After I brown the chops in the pan, I put them in a crockpot. I then add the "gravy" ingredients to the pan and get the extra flavor of the chops into the gravy, then pour it all over the chops. I cook it all day, on low, and when we are ready to eat, they are so tender that they just about fall apart.

A very tasty recipe! After reading the comments we did make a few changes and it turned out wonderful. We sauteed some onions in butter. While they were cooking we seasoned the chops with salt and pepper and browned them. We put the browned chops in a casserole dish, topped them with the sauteed onions. We mixed the cream of mushroom soup with 3/4 cup of milk and 3/4 cup of water, we added an envelope of pork gravy mix and a couple of dashes of onion powder, whisked this together and poured the mixture over the chops and baked them according to the directions. This is a keeper.

Best pork chop recipe ever, and it's easy. I used the suggestions of some other reviewers and after browning the pork chops, I removed them from the skillet and sauteed a chopped onion and several sliced fresh mushrooms. I put the chops into a baking dish, topped with the mushrooms and onions and then poured the liquid over it. I left the water out as several had suggested, I cooked at 275 for three hours (covered dish) and it was fork tender and absolutely delicious. Recommend highly!

I make a similar recipe. I salt and pepper the chops, dredge through flour and brown each side in a small amount of bacon grease. I mix together the cream of mushroom soup with 1/2 c milk, and 1/2 c dry white wine. Pour over the chops and bake covered for 45 minutes, then uncover and bake an additional 15 minutes…you can cut them with a fork!

I sautéed some mushrooms and minced garlic in the butter and scrapings left in the pan After browning the pork chops then mixed them in with the gravy. I also increased the gravy with two cans of soup and a 1/2 c of milk. Cooked for 55 mins as my boneless pork chops were thick. Served with mashed potato’s, green beans with onion powder and butter along with some mandrin oranges. It was fantastic. Pork Chops were very juicy and tender and had plenty of gravy for potatoes. My husband loved it and we both had seconds.

I have been making these for years. It is a great recipe to use with pork steaks a cheaper cut of meat. I season mine with salt, pepper and garlic powder. I don’t put milk in mine. Brown the chops then put into a casserole dish. Put the soup and water in the skillet to deglaze the pan. Pour over meat and cover dish. I bake mine for about ninety minutes. So easy and absolutely fabulous. Mashed potatoes on the side….yum!

The only thing I did different was to marinate my pork chops in beef bullion liquid prior to cooking..then I softened some sliced onions in butter & bit of olive oil in the skillet prior to starting my pork chops.. They were for tender! I topped the chops w/ the onions about 10 minutes in to the baking process and it turned out perfect.

Awesome. I sautéed 2 slices of onion and 2 cloves of garlic in the butter and a little olive oil, removed it and then put in the pork chops. In the sauce (gravy), I mixed in a 1/2 teaspoon of liquid smoke. It came out fabulous!!! Thank you for a great dinner. I will make it again!

I have never made a pork chop that hasn't been tough, dry and bland - until I found this recipe! What a difference, these turned out so good. I used bone-in chops and 2 cans of cream of mushroom soup because I had 6 big pieces and baked covered with foil. I served them with mashed potatoes and italian green beans.

I love how versatile this recipe is. I took some notes from other comments and did my own thing. I sauted onion garlic, mushrooms and 1/4 of a chopped seeded jalapeno and put in a side bowl. I thin-sliced 2 potatoes and browned them in butter in a skillet. Those were placed in the bottom of the baking dish. The browned pork chops were put on top of the potatoes. The gravy sauce is made in the same skillet, scraping up all the brown bits. I used beef broth instead of water and threw in some Worcester for good measure. Finally, I mixed in the onion/mushroom mixture and poured it over the pork chops before baking. So good!

What a great recipe! Made according to instructions except used all milk and a little garlic. It’s hard not to be tempted to think of something to add because it’s so simple, but I’ve made it twice now and I think it would ruin it to add things. I liked it ok with the garlic, but I’ve decided it probably doesn’t need it. The second time I used 1 1/2 cans of soup and proportional milk and water. I like lots of gravy and this was perfect for me. I also think it helps the flavor to get the chops nice and brown first. This is going on my regular rotation!

So I made this simple yet delicious dish for my Mom years ago. She LOVED it. Now she is several years older (her age to remain secret for threat of my murder) and I have made it again. Remember, most of our elderly require tender, chewable, delicious meals .... JUST LIKE THIS ONE! ♡
