  • cup Hellmann's Real Mayonnaise
  • cup grated Parmesan cheese
  • 4 boneless, skinless chicken breast halves (5 ounces each)
  • 4 teaspoons Italian-seasoned dry bread crumbs

Directions

Step 1: Gather all ingredients and prepare your workspace. Preheat the oven to 425F (220C) and line a rimmed baking sheet with parchment paper.

Step 2: In a medium bowl, mix the mayonnaise and Parmesan cheese together until smooth and evenly combined.

Step 3: Arrange the chicken breasts on the prepared baking sheet. Spread the mayonnaise-Parmesan mixture evenly over the top of each piece.

Step 4: Sprinkle the Italian-seasoned bread crumbs on top of the coated chicken for a crispy, flavorful crust.

Step 5: Bake the chicken in the preheated oven for about 20 minutes, or until the center is no longer pink and the juices run clear. Use an instant-read thermometer to ensure the internal temperature reaches at least 165F (74C).

Rewritten review: I found the original recipe to be quite good. However, I found that using less mayo to coat the chicken worked better for me, as the excessive mayo made the breading soggy. In my second attempt, I made some modifications. Instead of mixing everything together, I lightly coated the chicken with mayo before dredging it in the breadcrumb mixture. I also added some seasonings to the mixture, such as pepper and garlic powder, to suit my taste. While cooking, I placed the chicken breasts on a baking rack to prevent sogginess. These adjustments really elevated the dish for me, and I would now rate it 5 stars.
