This recipe is simple yet outstanding. I was missing canned tomatoes, so I substituted a 10 oz can of Rotel tomatoes and chilis, which worked wonderfully. I made this bison meatloaf following the recipe exactly, but instead of baking it, I decided to microwave it in a tupperware dish for 20 minutes and then let it rest for 5 minutes. I must have used a particularly juicy pound of bison beef because I ended up having to add an extra 3/4 cup of breadcrumbs and even dried out a slice of bread. I mixed in brown sugar and Worcestershire sauce to the ketchup. The end result was just okay, but it definitely took a long time to make a 1-pound meatloaf!
