Mexican Pasta Recipe
Original recipe yields 4 servings
Ingredients
- pound seashell pasta
- 2 tablespoons olive oil
- 2 onions, chopped
- 1 green bell pepper, chopped
- cup sweet corn kernels
- 1 (15 ounce) can black beans, drained
- 1 (14.5 ounce) can peeled and diced tomatoes
- cup salsa
- cup sliced black olives
- 1 tablespoons taco seasoning mix
- Salt and pepper to taste
Directions
Step 1: Bring a large pot of lightly salted water to a boil. Add the pasta and cook for 8 to 10 minutes, or until al dente. Drain the pasta once its cooked.
Step 2: While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the chopped onions and bell pepper. Saut for about 10 minutes, or until they are lightly browned and tender.
Step 3: Stir in the corn and cook for an additional 2-3 minutes until heated through.
Step 4: Add the black beans, diced tomatoes, salsa, olives, taco seasoning mix, and season with salt and pepper. Stir everything together and cook for about 5 minutes, or until thoroughly heated.
Step 5: Once the sauce is ready, toss it with the drained pasta, ensuring everything is well mixed. Serve immediately and enjoy your flavorful taco pasta!

I must admit I was a bit skeptical about this recipe, but it was excellent. Don't be scared off by the strange combination of ingredients -- this is a hearty vegetarian meal with great flavor and texture! I modified this recipe by only using one half of one onion (just seemed like too much otherwise). In addition, I used about half of a can of diced tomatoes, since I wanted the sauce to be thicker. I used a little cheese, and, since my family doesn't like peppers, I omitted them, and used diced avocado as a garnish for color and flavor. Definitely will make again!

I made a lot of changes. I didn't use any corn or peppers. I cooked the onions in olive oil in a dutch oven, added water and cooked 1 lb of linguini in the same pan. Added 1 can of black beans, 1 can of kidney beans, 28 oz diced tomatoes, 1 packet of taco seasoning and a shake of cajun seasoning, about 3 oz of cream cheese and salt and pepper to taste. Topped it on the plate with shredded chedder. My boyfriend and I loved it and will make it again. It gave me a good base to start with an build on.

I read a bunch of reviews for this and made some of my own changes and it came out delicious! I made this for a dinner party so I tripled the batch-I used 3 boxes of whole wheat shells that I boiled in a giant pot while sautéing 2 yellow onions in another pot with a little salt and pepper, Cajun spices, and chili powder. Then I added 3 cans each of black beans and corn-putting some of the liquid from them into the wok. Then I added lime juice from two limes (one probably would have been enough), two cans of rotel tomatoes, cilantro, and a small jar of salsa. Once the pasta was done (I boiled it for about 8 minutes) I drained it and returned it to the large pot and added a block of cream cheese. I heated it until it was melted and then added the wok of all the other stuff. And then I put in two packets of Taco Bell seasoning and mixed it up over heat until everything was hot. We ate it out of bowls and added sour cream, cheese, sliced avocado, and verde hot sauce. Everyone loved it!

I made as directed except used Rotel, used half cup Herdez mild salsa and a full packet of taco seasoning Just before serving added chopped fresh cilantro, couple scoops of lite sour cream and shredded Mexican blend shredded cheese . I feel the sour cream really helped. I thought the spice level was high was good but the son likes everything really spicy and it was a little mild for him, but I don't think kids would like more. It made a nice change.

I used what I had on hand- 1 orange pepper, added 1 can Kidney beans with the Black beans, doubled the noodles & diced tomatoes, used 1 ¹/²TBS Chili mix instead of taco (again, just what I had), no onion, but used 1 tsp dried onion. Super good, easy and enjoyed by all!

I don't like to review a recipe if I have altered it, but it tastes very good so I will tell you what I did. I had a can of tomatoes, a can of creamed corn, and a can of black eyed peas. To these I added purple onion (what I had), and the chopped black olives. I had no green pepper. I did have some sun dried tomatoes so I added those. I did not have salsa. I had some hummus I made yesterday, so I put about 1/4 of a cup of that in. I used the whole envelope of taco seasoning mix, gradually taste testing til it all ended up in there! I didn't have any pasta, so I have brown rice in the rice cooker right now, and will serve the sauce over the rice. I think this is a very forgiving recipe, put in what you have. It would be good with sour cream or plain yogurt, and avocado on the side. Also, could be made a bit hotter with some sort of chili's. Like I said, if I didn't alter it, I would give it 5 stars. But I can't rate what I didn't actually make. I love my version.

This is my kind of recipe. I made it with Banza pasta (chickpea pasta) and canned tomato with chiles. And Kroger Private Selection chipotle chile pepper salsa. I had a red pepper not green so I used that. No oil, I used veggie broth to saute the onion and red pepper. It pairs well with guacamole. So easy, delicious and vegan. What's not to love?

I added a mixture of ground turkey & ground pork (1/2 lb each), and substituted jalapeños for the bell pepper. Topped with some white cheese.

I thought this was going to be terrible. Boy, was I wrong! We barely had any leftovers. Made some minor changes - only used 1/2 onion, no bell peppers or salsa, whole can of mexicorn, whole can of Rotel for diced tomatoes, added some cayenne pepper, used 1 pkg of taco seasoning (will cut back a little next time), and stirred in sour cream near the end. Fantastic!!!

Substituted whole wheat spaghetti, added an extra 15oz diced tomato and used a whole 15oz can of black olives, topped with little kosher salt. Refrigerated overnight, served at a party next day, people couldn't get enough.

I ate it with noodles, and it was good. Ran out of the noodles and still had the bean mixture left so I baked some sweet potatoes and topped them with the bean mixture and added jalepenos. Oh boy! I highly recommend swapping the noodles with sweet potatoes. It went from good to great with the swap.

I made this exactly as written except I didn't have peppers (which surprised me) so I used jalopeno peppers instead. Oh I also used a can of Rotel instead of chopping up tomatoes. Anyway, I really like it but I felt it was missing something. I know it says a vegetarian recipe but I think we would like some kind of meat with it. So I'll add either ground turkey or beef next time. I topped it off iwith a little bit of sour cream, sprinkled some grated cheese and a bit more of picante sauce. I also felt it needed more of a sauce so I'll think I'll use picante sauce next time and use more than what's called for.

Only change I would make would be to add a little Mexican blend cheese, and put it over rice instead of pasta, but it is really flavorful!
