The World's Best Tortilla Soup Recipe
Chicken Tortilla Soup
Ingredients
- 1 tablespoon vegetable oil
- 1 white onion, diced
- 2 cloves garlic, diced
- 1 (32 ounce) can chicken broth
- 1 (14.5 ounce) can chicken broth
- 1 (15 ounce) can diced tomatoes
- 4 large fresh tomatoes, diced
- 2 Anaheim chile peppers, stemmed and seeded
- 1 jalapeo pepper, stemmed and seeded (optional)
- 2 tablespoons ground cumin
- 2 teaspoons chili powder
- 1 teaspoon ground black pepper
- 1 whole rotisserie chicken, torn into bite-sized pieces
- 1 lime, cut into 10 wedges
- 3 cups crushed corn chips
- 1 (8 ounce) sour cream
- 1 (8 ounce) package shredded Cheddar cheese
- 1 avocado, peeled, seeded, and sliced
- 3 sprigs cilantro, diced
Directions
- Heat the vegetable oil in a large stockpot over medium heat.
- Add the diced onion and garlic, then cook and stir until browned and tender, about 5 minutes.
- Stir in both cans of chicken broth and the diced canned tomatoes. Add the fresh tomatoes as well.
- Mix in the Anaheim chile peppers, jalapeo pepper (if using), ground cumin, chili powder, and black pepper. Stir well.
- Add the shredded rotisserie chicken and bring the soup to a boil.
- Once boiling, reduce the heat to medium and let the soup simmer for about 20 minutes, allowing the flavors to meld together.
- Carefully ladle the soup into individual serving bowls.
- Squeeze a lime wedge into each bowl to add a burst of citrus flavor.
- Top each serving with crushed corn chips, a dollop of sour cream, shredded Cheddar cheese, sliced avocado, and a sprinkle of cilantro.
Recipe Tip
You can substitute Mexican cheese blend for the Cheddar cheese and use tortilla strips (such as Mission) instead of corn chips for a slightly different texture.

I made this soup scaled out to 40 people instead of Anaheim Chile peppers i used Serrano peppers nice flavor a little less heat every one that had it loved it

Thank you, thank you for posting a tortilla soup with NO corn or black beans. I live on the border and never saw beans and corn in any of the true Mexican restaurants. That version is for the Mexican wannabe chain places. I do use canned roasted poblano strips (convenient) as well as 1" cuts of red and green bell peppers. The seasoning is spot on. I also cheat on occasion with broken up tortilla chips and I prefer oaxaca cheese but, like I said, I'm on the border.

This is a really good dish and easy to make but you need to add more seasoning, cumin, chili pepper, and black pepper just doesn’t cut it. I recommend adding some cayenne and paprika and definitely some salt cause for some reason this recipe has no salt in it and I don’t know why but it definitely needs salt Anyway that’s what I did taste great especially with all the toppings. It definitely needs the toppings as well to be good. don’t skimp on the toppings.

We love Tortilla Soup and although this one was OK, it wasn't quite 'it' for us. I like more veggies, carrots, corn & some rice too. If you can get it, use California or New Mexico Chili powder.
