Easy Spinach and Arugula Chicken Recipe
Stuffed Chicken Thighs with Spinach and Arugula
Ingredients
- cup baby spinach leaves
- cup arugula
- 1 clove garlic, slivered
- 1 bone-in chicken thigh with skin
- teaspoon seasoned salt
Directions
Step 1: Begin by preheating your oven to 350F (175C). Take a bone-in chicken thigh and carefully lift the skin. Stuff the spinach leaves, arugula, and slivered garlic under the skin, making sure they are evenly distributed.
Step 2: Place the prepared chicken thigh in a baking dish. Sprinkle seasoned salt over the top of the chicken.
Step 3: Transfer the baking dish to the oven and bake for about 50 minutes, or until the chicken is no longer pink at the bone and the juices run clear. You can check the internal temperature with an instant-read thermometer, which should read 165F (74C) near the bone.

Super simple recipe! I didn't have arugula on hand, so I substituted with kale. I drizzled olive oil and added crushed garlic. Following the tip to put the seasoning inside the skin was spot on. The result was incredibly moist and flavorful! Definitely adding this to my go-to recipes list!

I absolutely adored the straightforwardness and fantastic taste of this dish. I used only spinach and decided to throw in some extra garlic. It's amazing how much can be packed under the skin, resulting in juicy and flavorful meat. For my next attempt, I plan on incorporating seasoning salt to the spinach and garlic mixture since I don't consume the skin.

This dish lacked any flavor. I only rated it two stars because the spinach/arugula added a healthy element to it.
