Oh-So-Good Chicken Recipe

Ingredients

  • 4 teaspoons olive oil
  • 2 cups fresh sliced mushrooms
  • 2 cups cooked white rice
  • 1 (16 ounce) jar salsa
  • 8 ounces boneless chicken breasts, cooked and diced
  • 4 ounces shredded Cheddar cheese
  • 6 tablespoons sour cream

Original recipe (1X) yields 5 servings

Directions

Step 1: Preheat the oven to 350F (175C).

Step 2: Heat the olive oil in a skillet over medium heat. Once hot, add the sliced mushrooms and cook, stirring occasionally until the mushrooms soften and release their moisture.

Step 3: In a large mixing bowl, combine the cooked mushrooms with the cooked white rice, salsa, diced chicken, shredded Cheddar cheese, and sour cream. Stir everything together until evenly mixed.

Step 4: Transfer the mixture into a greased casserole dish, spreading it out evenly.

Step 5: Place the casserole dish in the preheated oven and bake for 25 to 35 minutes, or until the top is slightly golden and the dish is heated through.

I tried this with and without mushrooms, and it is definitely better WITH them! I also added a can of black beans, extra cheese, green onions, and fresh cilantro. Served it with avocado and warm tortillas - great, easy meal!

This was a good dish. Next time I'll use less salsa. Also I should point out that the recipe calls for 2 cups of COOKED rice. If you measure out 2 cups of uncooked rice you will get about 6 cups of cooked rice. Hope this helps.

I needed something fast and easy to make, and this fit the bill perfectly. It's tasty and easy to serve, and at least somewhat healthy. I had chicken thighs to use up, which I cubed and then marinated for a couple of hours in salt, pepper, cumin and chili powder. Fried the chicken up in butter, then added diced onion and fried until clear. Used corn instead of mushrooms (didn't have any on hand), and brown rice instead of white, again because that's what I had on hand. My adult kids liked it, and my 3 yr old grandson wolfed down 3 bowls in short order, so it's a keeper. :)

Simple to make and easy to amend to your preferences. I used a container of shredded rotisserie chicken from the store and added tumeric to the rice, which I cooked in chicken stock. I also added a can or fire roasted Rotel tomatoes, about 1/2 cup of Pace restaurant style salsa, a can of corn, and a sauteed onion with some garlic. I omitted the mushrooms, but kept the sour cream in. I topped it generously, with shredded colby jack cheese. I also did not follow any measurements. I baked it covered at 350 for 30 minutes, then removed the foil and broiled on low, to brown the top. It came out great and made a lot of leftovers, which is awesome.

I’ve been making this for years, the mushrooms are a must! Recently I’ve been adding black beans and sweet corn and it definitely makes it feel more of a complete meal.

This is very good and so easy to prepare. I will make it again. Many reviewers said the dish was mushy and soupy, but mine was not runny, and the rice was firm. I made this in a Dutch oven to go from stovetop to oven with one pan. After reading other reviews, I will try adding black beans and green onions and using a Mexican cheese blend the next time.

This was unbelievably delicious. I did make a couple of changes based on ease and what I had on hand. I used a microwave pouch of garlic brown rice and quinoa, so there was less rice. No tomato salsa on hand, so I subbed a can of Rotel and about a 1/3 C salsa verde. Also added cumin as mentioned in other reviews. No mushrooms. Cooked it in my casserole crockpot for 2 hours. It was soooo good that I can't wait for leftovers tonight! The sour cream made it, so don't skip that.

It was really yummy and easy. I poached the chicken and pulled it rather than cut it so it was more mixed in. It was a breast and a half and less than 2 full cups of rice. I mixed and added as I went to match the size of my pan. I followed input from others to add cumin and garlic powder. I don't like hot spice, but used medium picante sauce and served with olives, jalapenos, and sour cream toppers for those who wanted. I don't like mushrooms so skipped them. Served with chips.

Very tasty as written, but I've made some changes which I think improve the dish greatly; I sub a can of Goya black beans, well rinsed, for the mushrooms, more authentically Latin and no need to sauré anything, making it even easier. I use Goya yellow Spanish rice (2 cups, cooked) instead of white. I recommend serving with chunky guacamole as a garnish, perhaps some sour cream. Then you'll have a 5 star casserole, and it couldn't be easier to make.

This was a good and easy recipe. Since my wife does not eat mushrooms, I substituted artichoke hearts for a little more fiber and great flavor. Still a family favorite.

This one one of the quick and easiest recipe. I changed it up a bit by adding pinto beans, southwest salsa and a taco seasoning packet. I sautéed mushrooms, garlic and onion. I added the salsa, chicken and taco packet, then sautéed it altogether. Then added this to the rice, sour cream and cheese. My son loved it!

This was a great recipe for a busy weeknight! Few ingredients and easy preparation with great flavor, just added some onion with mushrooms. I made the recipe prior to reading the reviews, so my dish was 2 cups of uncooked rice which still worked out beautifully and was 5 adult servings. We added pickled jalapeno as a topper.

A very basic and flexible recipe--I used a salsa verde while others have have mentioned lots of variety in the salsa type used. I also scrimped on the rice since we prefer a lower carb meal. I've done it a couple of times now and used several salsas with salsa verde and a diced roma tomato being our favorite plus a variety of cheeses. Our preferred cheese is pepper jack, and I also like to add 1/2 c diced onion, 1 T minced garlic (3-4 cloves), and some fresh cilantro. When my sister, a mushroom hater came to dinner, I subbed diced zucchini and used sharp cheddar. My family likes the mushrooms more. I've also made this recipe with leftover pork roast.

This was a great recipe, that I did modify some. I added sautéd onions, and a touch of minced garlic. I also used 1 cup Black bean and Corn Salsa, rather than regular Salsa. I added a can of black beans and a cup of super sweet white corn.

Really good flavor. Added 1 Tbsp dried cilantro and topped with extra shredded cheese. Next time will also add more salsa (used black bean and corn salsa). Mixed it all in a stainless steel skillet and just popped the pan into the oven.
