Salmon Croquettes Recipe

Add a bit of finely choped dill, salt, & white pepper to the (white) cornmeal . Hollandaise sauce is also an excellent topping for these croquettes, or on any seafood cakes.

I made two substitutions because I didn’t have the ingredients. I substituted fresh arugula for parsley and chili pequines and sautéed garlic for the seafood seasoning. I finished with fresh lemon juice.
