Cook Time: 25 minutes

This creamy chicken dish with mushrooms, served over rice, is a comforting and easy-to-make meal. Perfect for a weeknight dinner or when you want something rich and flavorful!

Ingredients

  • 1 1/4 pounds skinless boneless chicken thighs, cut into bite-sized pieces
  • 1/2 teaspoon salt, divided
  • 1/2 teaspoon freshly ground black pepper, divided
  • 3 tablespoons all-purpose flour, divided
  • 1 tablespoon vegetable oil, plus more as needed
  • 1 tablespoon butter
  • 8 ounces cremini mushrooms, sliced
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 cup reduced-sodium chicken broth
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons Dijon mustard
  • 1/2 cup sour cream
  • 2 cups hot cooked rice, or as needed
  • Paprika, to taste
  • Chopped fresh chives

Directions

Step 1: Gather all ingredients. Prepare them for cooking so you have everything ready.

Step 2: Season the chicken with 1/4 teaspoon salt and 1/4 teaspoon pepper. Sprinkle 2 tablespoons of flour over the chicken and toss to coat evenly.

Step 3: Heat 1 tablespoon of oil in a 12-inch skillet over medium heat. Add half of the chicken pieces and cook for 3 minutes on each side, or until golden brown. Transfer the browned chicken to a plate. Repeat with the remaining chicken, adding more oil if necessary.

Step 4: In the same skillet, melt the butter. Add the sliced mushrooms and chopped onion. Cook for 6 to 8 minutes, or until the mushrooms release their liquid and most of it evaporates.

Step 5: Add the minced garlic to the skillet and cook for about 1 minute, or until fragrant.

Step 6: Sprinkle the remaining 1 tablespoon of flour over the mushrooms and onion. Stir and cook for 1 minute to remove the raw flour taste.

Step 7: Add the chicken broth, Worcestershire sauce, Dijon mustard, and the remaining salt and pepper to the skillet. Stir well while scraping up any browned bits from the bottom of the skillet. Bring the mixture to a boil.

Step 8: In a small bowl, add the sour cream. Gradually whisk in about 1/2 cup of the hot broth mixture into the sour cream to temper it. Then, slowly add the sour cream mixture back into the skillet, stirring to combine.

Step 9: Bring the skillet back to a boil. Return the browned chicken to the skillet and simmer for 2 to 3 minutes, or until the chicken is heated through and the sauce thickens slightly.

Step 10: Serve the chicken and mushroom mixture over hot cooked rice. Garnish with a sprinkle of paprika and freshly chopped chives.

Chicken Stroganoff Recipe

The Story Behind Chicken Stroganoff

Chicken Stroganoff is a flavorful adaptation of the classic Russian dish, Beef Stroganoff, which dates back to the 19th century. Named after the Stroganov family, wealthy Russian merchants, the original recipe featured tender strips of beef cooked in a sour cream and mustard sauce. Over time, home cooks and chefs around the world began substituting beef with more affordable or readily available proteins, such as chicken or turkey, resulting in the popular Chicken Stroganoff we enjoy today. This variation maintains the creamy richness and comforting flavors of the original while offering a lighter, more versatile option.

Regional Variations and Distinctive Twists

While the dish originated in Russia, Chicken Stroganoff has taken on regional personalities across Europe and North America. In Eastern Europe, it often includes a touch of paprika and dill, emphasizing the earthy and slightly smoky flavors. In North America, the recipe is commonly paired with noodles, rice, or mashed potatoes, making it a hearty family meal. Some chefs add wine or brandy to deepen the sauce, while others experiment with mushrooms or even peppers to enhance the complexity of flavors.

How Chicken Stroganoff Differs from Similar Dishes

Though reminiscent of other creamy chicken dishes, Chicken Stroganoff stands out because of its characteristic balance of tangy sour cream, savory mushrooms, and subtle mustard. Unlike creamy chicken casseroles or chicken la king, Stroganoffs sauce is typically thinner and cooked on the stovetop, allowing the flavors of the chicken and mushrooms to meld harmoniously. The touch of Dijon mustard and Worcestershire sauce also provides a slightly piquant note, distinguishing it from more straightforward cream-based sauces.

Where Its Commonly Served

Chicken Stroganoff is a versatile dish that can be enjoyed both at home and in restaurants. In Russian-inspired bistros and Eastern European eateries, it is often presented over buttered egg noodles or fluffy white rice. Family dinners frequently feature it as a main course due to its ease of preparation and broad appeal. It is equally popular in casual dining restaurants, where it might appear as part of a comfort-food menu alongside roasted vegetables and fresh bread.

Interesting Facts

  • Despite its Russian roots, Chicken Stroganoff is more commonly found in modern Western kitchens than the original beef version, largely because chicken is more accessible and quicker to cook.
  • The dish gained international popularity during the mid-20th century when American and European cookbooks began adapting traditional Russian recipes for home use.
  • Sour cream is essential to authentic Stroganoff flavors, but some modern variations use yogurt or crme frache for a lighter, tangier alternative.
  • Adding mushrooms not only enriches the flavor but also reflects the dishs Slavic heritage, where forest fungi were a staple in many traditional meals.

I love stroganoff, so I was excited when I came across this Chicken Stroganoff recipe! I used a whole grain mustard instead of Dijon and served it over pappardelle pasta. This recipe is a keeper!

Had some leftover turkey and used that instead of chicken. Husband liked it, so I’d say it was a successful dish.

Loved it. Used chicken breasts instead of thighs. So cooked it a bit longer. Added more salt and pepper. Other than that, followed recipe exactly.

This had no flavor to me and was a disappointment for the amount of time, effort, and cleanup involved.
