France Cevallos, one of our Allstar home cooks, created this Bang Bang Blended Chicken Burger as part of the "Mix It Up With Mushrooms" contest, and it went head to head with four other unique recipes. Bang Bang Blended Chicken Burger: Anything But Basic
Years ago, recipe creator France Cevallos tasted her first craft burger, and from that moment on, she was hooked on bold and unique flavors. "From that point on, I was hooked on the unique and daring when it came to burgers and rarely will I eat a basic burger, she shares.
Frances recipe gives ground chicken a boost of umami flavor, making it a perfect option for those who typically prefer beef. This recipe is bold and bursting with flavor, perfect for a dinner party or special meal.
For drinks, France suggests pairing this burger with light and refreshing beverages like a gin cocktail or a glass of Chenin Blanc. If you prefer beer, a pilsner is a great choice. For a non-alcoholic option, go for citrus-flavored sparkling water.
Ingredients
Pickled Vegetable Slaw:
- 3/4 cup rice vinegar
- 2 tablespoons water
- 2 teaspoons white sugar
- 2 teaspoons sesame seeds
- 1 small carrot, cut into matchsticks
- 1/4 large English cucumber, cut into matchsticks
- 1/4 small red onion, cut into 1/8-inch thick wedges
Bang Bang Sauce:
- 1/2 cup mayonnaise
- 1/4 cup Thai sweet chili sauce
- 2 teaspoons Sriracha, or more to taste
- 1 teaspoon rice vinegar
- 1/8 teaspoon salt
Burgers:
- 1 (8 ounce) package crimini mushrooms, halved or quartered
- 6 tablespoons peanut oil, divided
- 1 pound ground chicken (white and dark meat)
- 1 1/4 teaspoons salt
- 4 jalapeo peppers, halved and seeded
- 8 green onions, ends trimmed and onions cut in half crosswise
- 4 brioche buns, split
- 2 large eggs
- 1 1/2 cups panko bread crumbs
- 2 tablespoons minced cilantro
Directions
Step 1: In a small bowl, whisk together 3/4 cup rice vinegar, water, sugar, and sesame seeds until the sugar dissolves. Add the carrot, cucumber, and red onion (separating the onion layers), and toss to coat. Chill until ready to use, stirring occasionally to keep the vegetables submerged in the brine.
Step 2: In another small bowl, whisk together mayonnaise, Thai sweet chili sauce, Sriracha, 1 teaspoon rice vinegar, and salt. Chill the Bang Bang Sauce until ready to use.
Step 3: Preheat your oven to 400F (200C). Line a rimmed baking sheet with aluminum foil. Toss the mushrooms with 1 tablespoon of oil and spread them out in a single layer on the prepared baking sheet. Roast for 15 minutes, stirring halfway through. Remove from the oven and allow to cool.
Step 4: Transfer the cooked mushrooms to a food processor and pulse 5-6 times, scraping down the sides of the bowl, until finely minced. Alternatively, you can mince them by hand with a knife.
Step 5: In a large bowl, combine the minced mushrooms, ground chicken, and salt. Mix thoroughly, but be careful not to overmix. Form the mixture into 4 patties, about the size of your brioche buns, and place them on squares of parchment paper or plastic wrap to prevent sticking. Refrigerate the patties for at least 30 minutes to firm up.
Step 6: When you're ready to cook the burgers, set your oven rack about 6 inches from the heat source and preheat the broiler. Place the jalapeo halves and green onions on a baking sheet. Drizzle with 1 teaspoon of oil and broil until charred, turning halfway through, about 10 minutes. Set aside.
Step 7: While the vegetables are broiling, preheat a large cast iron skillet over medium-high heat. Brush the skillet with 1 teaspoon of oil and toast the brioche buns, cut side down, until lightly browned, about 2 to 4 minutes. Set aside.
Step 8: In a shallow dish, whisk the eggs and water together. In another dish, place the panko bread crumbs. Dip each burger patty into the egg mixture, letting the excess drip off, then press lightly into the breadcrumbs to coat both sides.
Step 9: Heat the remaining oil in the cast iron skillet over medium heat. Fry the burger patties for about 3 minutes per side, until the internal temperature reaches 165F (74C). Place the cooked patties on a plate lined with paper towels.
Step 10: Spread a light layer of Bang Bang Sauce on the bottom halves of the toasted brioche buns. Add two charred jalapeo halves per bun, then place a burger patty on top. Top with the pickled slaw, charred scallions, and cilantro. Drizzle with more Bang Bang Sauce and serve.
Cook's Notes
- For the best flavor and texture, use a blend of white and dark ground chicken. Ground chicken breast alone can be dry.
- If you prefer a beef burger, substitute 1 pound of 80/20 ground chuck for the chicken and omit the breading step.
