My family raved at dinnertime! They loved the flavor and I loved the simplicity. I did use a different cheese (a melty sheep's cheese, since I can't tolerate cow dairy), and I think that the cheese added a lot of flavor. To anyone wanting to up the flavor of this dish, I'd suggest using all or half of a different cheese instead of or in addition to mozzarella.
