We have a potluck at work in a couple of weeks and I wanted to try this recipe to see if it would be easy to do. It passed muster, although next time I'll cube the chicken before putting it in the crockpot and skip shredding it. I also used Bacon Ranch, which seemed to work well, so I don't have to worry about cooking and adding any bacon. Note: 3.5 tablespoons ranch dressing mix is equivalent to one packet.

Great recipe except my potatoes were still hard after cooking 4 hours on low and then another 30 minutes on high. Think next time I'll cut the little potatoes in half. Update: gave this recipe another shot. This time I cut the potatoes in half and cooked it for 4 hours on HIGH. That worked so much better. If you wanted to do it on low I would recommend 8 hours then.

Absolutely delicious! We make it according to the recipe and we also change it up a little. I think that is the beauty of this recipe, it is very customizable. When we change it, we have reduced the chicken in favor of adding vegetables like carrot, celery, zucchini, and more. Because of how versatile it can be, it stays on our rotation

Great flavor! Definitely keeping this one in the rotation. I used chicken thighs and cut them up before putting in the crock pot. Next time I’ll leave them whole as they just fall apart anyway. I used really small red and white potatoes and they were cooked thru no problem. I cooked on low for 7 hours then added the other ingredients and left it on low for another 30 minutes. I added steamed carrots to the mix before serving, next time I’ll just add a bag of baby carrots in the beginning. Be sure and top with cheese, bacon bits and green onions. Perfect topping!

i had to leave the potatoes in the slow cooker for like overnight, for them to even be somewhat tender, since sauce doesnt thicken up in my crock pot, i have to transfer the broth, chicken, potatoes, seasonings, sauce into a pot on the stove (after everything is tender) and thicken the sauce/gravy sauce up with either cornstarch slurry or flour slurry, that's the only way it's going to work.

I'm in over the road truck driver and recently I started cooking in my slow cooker. And I'm always looking at recipes and see what's quick and easy to prepare and that I can get some leftovers to freeze. That looks absolutely heartwarming for those cold days coming up.
