Blueberry Squares Recipe
Blueberry Chickpea Crumble Bars
Ingredients:
- 1 (14 ounce) can chickpeas (garbanzo beans), drained and rinsed
- cup rolled oats
- cup brown sugar
- cup olive oil
- 2 teaspoons vanilla extract
- 1 teaspoon baking powder
- teaspoon baking soda
- teaspoon salt
- 3 cups blueberries
- 2 tablespoons white sugar
- 1 tablespoon lemon juice
- 2 tablespoons cornstarch
- cup cold water
- 1 cups rolled oats
- 1 cup all-purpose flour
- 1 teaspoon vanilla extract
- teaspoon baking soda
Directions:
Step 1: Preheat your oven to 350F (175C).
Step 2: In a food processor, combine chickpeas, cup rolled oats, cup brown sugar, cup olive oil, 2 teaspoons vanilla extract, baking powder, teaspoon baking soda, and salt. Process until the mixture reaches a dough-like consistency.
Step 3: Press the dough evenly into an 8x11-inch baking pan. Bake in the preheated oven for about 20 minutes, or until the crust is crispy and lightly browned.
Step 4: In a saucepan, combine blueberries, white sugar, and lemon juice. Cook over medium-low heat for 10 to 15 minutes until the blueberries have reduced.
Step 5: In a small bowl, whisk together cornstarch and cold water. Stir this mixture into the blueberry filling. Continue cooking for 2 to 3 minutes, or until the mixture thickens.
Step 6: Pour the blueberry mixture evenly over the baked crust.
Step 7: In a large bowl, combine the remaining 1 cups rolled oats, flour, cup brown sugar, cup olive oil, 1 teaspoon vanilla extract, and teaspoon baking soda. Mix until the ingredients form a crumbly texture.
Step 8: Sprinkle the oat mixture evenly over the blueberry filling.
Step 9: Return the pan to the oven and bake for another 20 minutes, or until the blueberry filling is bubbling and the crumble topping is lightly browned.
Step 10: Let the bars cool completely before cutting into squares. Store any leftovers in the refrigerator.
