Homemade Cherry Ice Cream Recipe

Original recipe (1X) yields 4 servings
- 1 pounds fresh cherries, pitted and quartered
- 1 cup white sugar, divided
- 3 tablespoons lemon juice
- 1 tablespoon balsamic vinegar
- 1 cup milk
- 2 cups heavy cream
- 1 teaspoon vanilla extract
Directions
Step 1: In a medium bowl, combine the fresh cherries, cup of sugar, lemon juice, and balsamic vinegar. Mix well and let it sit for 2 hours to allow the flavors to meld together. After this time, drain the mixture, but be sure to reserve the juice.
Step 2: Mash half of the cherries with a fork or blend them until smooth in a blender.
Step 3: In a separate bowl, combine the milk and the remaining cup of sugar. Use an electric mixer to beat the mixture until the sugar dissolves, about 1 to 2 minutes.
Step 4: Add the reserved cherry juice, the heavy cream, the pureed cherries, and the vanilla extract to the milk mixture. Stir everything together until well combined.
Step 5: Pour the mixture into an ice cream maker and freeze according to the manufacturer's instructions. This should take about 20 minutes.
Step 6: After the initial freezing, add the remaining quartered cherries into the ice cream and freeze for an additional 5 minutes. This will help distribute the cherries evenly in the ice cream.
Step 7: The ice cream should be creamy and smooth. If you prefer a firmer consistency, transfer the ice cream to an airtight and freeze for an additional 4 hours or until firm.
Step 8: Before serving, remove the ice cream from the freezer and let it sit for about 10 minutes to soften slightly for easier scooping.
