Cheesecake Pops

Ingredients

  • 3 (8 ounce) packages cream cheese, softened
  • cup sugar
  • cup sour cream
  • 3 tablespoons all-purpose flour
  • 1 teaspoon vanilla extract
  • teaspoon salt
  • 3 eggs
  • 24 lollipop sticks
  • 10 ounces white confectioners' coating
  • Miniature semisweet chocolate chips
  • Toasted coconut

Directions

  1. Preheat the oven to 350F (175C).
  2. In a large bowl, beat the cream cheese and sugar together until smooth and well combined.
  3. Add the sour cream and mix thoroughly, ensuring the sides of the bowl are scraped down.
  4. Stir in the flour, vanilla extract, and salt until fully incorporated.
  5. One at a time, add the eggs, blending each egg completely before adding the next. Be careful not to overbeat the mixture.
  6. Pour the batter into a 9-inch springform pan and smooth the top.
  7. Bake for 50 minutes, or until the edges of the cheesecake begin to turn golden brown. Let it cool on a wire rack for 1 hour.
  8. Refrigerate the cheesecake for at least 3 hours, or overnight for best results.
  9. Once chilled, use a small cookie scoop to form 1 -inch round balls of cheesecake.
  10. Place the cheesecake balls onto a cookie sheet lined with waxed paper.
  11. Insert a lollipop stick into each cheesecake ball and freeze for about 30 minutes, or until firm.
  12. While the cheesecake balls freeze, melt the white confectioners' coating (or use semi-sweet chocolate) according to the package directions.
  13. Dip each cheesecake pop into the melted coating, then immediately dip into your choice of toppings such as miniature chocolate chips, toasted coconut, or any other preferred topping.
  14. Place the dipped cheesecake pops back onto the waxed paper and let the coating set. Refrigerate until ready to serve.

Cook's Note

You can experiment with various toppings such as mini chocolate chips, toasted coconut, nuts, sprinkles, or even caramel topping for added flavor.
