Easy Lemon Mousse Recipe

Ingredients

  • cup heavy cream
  • 1 tablespoon confectioners' sugar
  • 1 (4 ounce) package cream cheese, softened
  • 1 cups lemon curd
  • teaspoon vanilla extract
  • 4 tablespoons mixed fresh berries
  • 4 fresh mint leaves

Directions

  1. Step 1: In a chilled glass or metal bowl, beat the heavy cream with an electric mixer until frothy.
  2. Step 2: Gradually add the confectioners' sugar, continuing to beat until stiff peaks form. Start on low speed and gradually increase to high speed. This will take about 2 minutes. Set the whipped cream aside.
  3. Step 3: In a separate bowl, beat the cream cheese with an electric mixer for 1 to 2 minutes until it becomes lump-free.
  4. Step 4: Add the lemon curd and vanilla extract to the cream cheese mixture. Mix for another 1 to 2 minutes until smooth and creamy.
  5. Step 5: Gently fold the whipped cream into the lemon mixture until just combined.
  6. Step 6: Divide the mousse evenly among 4 dessert dishes or ramekins.
  7. Step 7: Chill the mousse for at least 1 hour before serving.
  8. Step 8: Garnish with fresh mixed berries and mint leaves before serving.

Tips

The mousse is rich, so you may find a smaller serving is more appropriate. In this case, the recipe will yield 6 servings instead of 4.

I made this for Mother's Day exactly as written. It was so light and devine tasting. Served with a mixture of berries and a store bought cookie. Everyone loved it.
