Brownie-Mallow Bars Recipe
Ingredients
- 1 (16.3 ounce) package brownie mix
- cup vegetable oil
- cup water
- 2 large eggs
- 1 (10.5 ounce) package miniature marshmallows
- 2 cups semisweet chocolate chips
- 1 cup peanut butter
- 1 tablespoon butter
- 1 cups crispy rice cereal
Directions
- Preheat the oven to 350F (175C). Grease a 9x13-inch baking dish.
- In a large bowl, combine brownie mix, oil, water, and eggs. Stir until smooth.
- Pour the mixture into the prepared baking dish and spread it out evenly.
- Bake in the preheated oven for 28-30 minutes, or until a toothpick inserted into the center comes out clean.
- Sprinkle marshmallows evenly over the top of the brownies. Continue baking for another 3 minutes, or until the marshmallows have melted slightly.
- Remove from the oven and set aside to cool completely.
- In a saucepan, combine chocolate chips, peanut butter, and butter. Cook over low heat, stirring until smooth.
- Once melted and smooth, remove from heat and stir in the crispy rice cereal.
- Spread the chocolate-peanut butter mixture over the cooled brownies.
- Refrigerate the brownies until the topping is firm, about 1 hour.
- Once firm, slice into squares and serve.

I have been making these treats for the past two years to give to my friends and neighbors during the holiday season, and they always receive rave reviews. I tried the Ghiradelli brownie mix and followed the instructions on the box, using oil, eggs, and water as directed. I decided to use a 9x13 pan instead of the recommended 9x9, concerned that they might turn out too thin, but they turned out perfectly. The brownies were easy to make and a hit with everyone. I followed the recipe by adding semi-sweet chocolate chips, and storing them in the fridge kept the marshmallow soft and gooey. I will definitely make this recipe again!

Delicious flavor! I prepared the Ghirardelli Chocolate Supreme mix following the instructions on the box. Opted for semi-sweet chips and, to my delight, everyone found it sufficiently sweet. However, aside from myself, others felt there was an excess of peanut butter (which I personally found just right). Baked the marshmallows for only 3 minutes in the oven. The batch yielded plenty and I'll be enjoying this treat for the next few days.

Super simple to prepare and a hit with everyone! I decided to use fewer marshmallows than the recipe suggested because I was concerned about fitting everything in my pan, and I'm glad I did. I also increased the amount of crispy rice by almost double, which gave it a nice extra crunch. My colleagues devoured this treat in no time!

This recipe is incredibly simple to follow and absolutely delicious! I prepared these treats for a homecoming event at my church, and despite the variety of desserts available, only two pieces were left to take home. The leftovers didn't last long either. I melted the chocolate chips and peanut butter in the microwave which worked perfectly.

I opted for a rich dark chocolate brownie mix paired with dark chocolate chips for my baking. In a pinch, crushed rice squares make a great substitute for rice krispies.

I prepared these brownies myself and they turned out delicious! Normally, I bake boxed brownie mix in an 8"x 8" pan, but this time I opted for a 9" x 13" pan and it worked out perfectly due to the toppings. I added walnuts to the batter and substituted Rice Cereal in the chocolate/peanut butter topping with crushed lightly salted ridged potato chips. The batch was large enough to share with my family members, and they all loved this simple recipe! Thumbs up all around!

God help us. I made them. But what else was I gonna do?? It's the pandemic. My partner and I have been under "Shelter in Place" for over a month. Apart from repainting the house, I've been trying out all the recipes I've wanted to make. These Ooey gooey SWEET decadent treats were pure happiness. I used Brook's Bombshell Brownie recipe for the base and followed the instructions closely. I absolutely adore the different textures! Make sure to let those marshmallows cool completely before spreading the peanut buttery chocolate crispy goodness on top. Warning: This dessert is not for those who shy away from sweetness.

Delicious potential...I ended up baking the marshmallows for too long, which resulted in the bars being difficult to cut and eat:(. I've learned my lesson...next time, I'll get it right because they are delicious otherwise.
