Keto Crème Brûlée Recipe
Ingredients
This recipe was developed for its original yield. Ingredient amounts will automatically adjust for different servings, but cooking times and steps remain the same. Note that not all recipes scale perfectly. Original recipe (1X) yields 4 servings.
- 4 egg yolks
- 1 teaspoon vanilla extract
- 2 cups heavy whipping cream
- 5 tablespoons low-calorie natural sweetener (such as Swerve), divided
Directions
- Step 1: Preheat your oven to 325F (165C).
- Step 2: In a medium bowl, whisk together the egg yolks and vanilla extract until fully combined and smooth.
- Step 3: Pour the heavy cream and 1 tablespoon of sweetener into a saucepan. Heat over medium heat, whisking constantly, until the mixture begins to simmer. Remove from heat.
- Step 4: Gradually add the warm cream mixture into the egg yolks, whisking continuously to avoid curdling. Make sure the mixture is smooth and fully incorporated.
- Step 5: Divide the custard evenly among 4 ramekins. Place the ramekins in a glass baking dish and pour hot water into the dish until it reaches halfway up the sides of the ramekins.
- Step 6: Bake on the middle rack of the oven until the custard is set, approximately 30 minutes. The center should be slightly jiggly when gently shaken.
- Step 7: Remove the ramekins from the water bath and let them cool slightly. Sprinkle 1 tablespoon of sweetener evenly over each custard.
- Step 8: Use a culinary torch to caramelize the sweetener until golden and crisp, about 30 seconds per ramekin.
- Step 9: Refrigerate the crme brle for at least 10 minutes to allow it to fully set before serving.

Delicious! To enhance the flavor, I included two tablespoons of sweetener in the cream instead of just one. It's crucial to thoroughly beat the egg yolks. I neglected to do so initially, resulting in a soupy custard. However, on my second attempt, I made sure to beat the yolks well with my mixer, and the outcome was perfect.

This dessert is absolutely amazing! I prepare it weekly as my indulgent Keto treat (it's incredibly decadent, so a small serving is satisfying). It requires more than 30 minutes to bake, usually around 45 minutes to set perfectly. I highly recommend chilling it in the fridge and enjoying it cold. Occasionally, I like to add a sprinkle of cinnamon on top (mixed with sugar!). If you don't have a torch, simply broil the sugar topping in the oven for approximately 30 seconds until it caramelizes. Overall, a fantastic recipe!

I added an extra egg yolk, doubled the amount of sweetener, and baked it for 45 minutes, although it might have been due to differences in ovens. Since I didn't have a torch, I ended up putting it back in the oven on broil for 90 seconds.

I scaled down the recipe to make just one serving, and it was fantastic! The texture was a bit softer than traditional creme brulee, not as firm as I've experienced in the past. However, it wasn't runny, and the sweetener on top still caramelized well. I'm definitely a fan and will certainly make it again. Both my husband and mother-in-law thought it was delicious! Note to self: I tried doubling this recipe and ran into an issue with the sugar measurement in step three. The heavy cream mixture turned out bland because the sugar amount wasn't adjusted accordingly. Keep in mind to manually alter the sugar quantity if you're adjusting the servings. Apart from that, it's a fantastic recipe.
