Apple Pie Cookies
Ingredients
- 1 cup butter
- 6 ounces cream cheese, softened
- 2 tablespoons vanilla extract
- 2 cups all-purpose flour
- 5 teaspoons white sugar
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1 (15.25 ounce) can apple pie filling, or as needed
- 2 tablespoons sugar, or to taste
- 1 teaspoon ground cinnamon, or to taste
Directions
- Preheat the oven to 350F (175C). Line 2 baking sheets with parchment paper.
- To make the dough: In a large bowl, beat the butter, cream cheese, and vanilla extract together until smooth.
- Add the flour, 5 teaspoons of sugar, baking powder, and 1 teaspoon of cinnamon. Mix until the dough comes together.
- On a floured work surface, roll the dough into a 1/4-inch thick round.
- Using a cookie cutter, cut out 48 circles from the dough.
- Place a teaspoon of apple pie filling on top of 24 dough circles. Cover with the remaining 24 circles of dough.
- Crimp the edges of the dough with a fork to seal the cookies.
- Arrange the cookies on the prepared baking sheets.
- Bake in the preheated oven for 23-29 minutes or until the cookies are golden brown.
- Let the cookies cool for 5 minutes on the baking sheets.
- To make the topping: In a shallow bowl, mix 2 tablespoons of sugar with 1 teaspoon of cinnamon.
- Roll the warm cookies in the sugar-cinnamon mixture until evenly coated.
- Transfer the cookies to a wire rack to cool completely.
