Apple Pie Cookies

Ingredients

  • 1 cup butter
  • 6 ounces cream cheese, softened
  • 2 tablespoons vanilla extract
  • 2 cups all-purpose flour
  • 5 teaspoons white sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1 (15.25 ounce) can apple pie filling, or as needed
  • 2 tablespoons sugar, or to taste
  • 1 teaspoon ground cinnamon, or to taste

Directions

  1. Preheat the oven to 350F (175C). Line 2 baking sheets with parchment paper.
  2. To make the dough: In a large bowl, beat the butter, cream cheese, and vanilla extract together until smooth.
  3. Add the flour, 5 teaspoons of sugar, baking powder, and 1 teaspoon of cinnamon. Mix until the dough comes together.
  4. On a floured work surface, roll the dough into a 1/4-inch thick round.
  5. Using a cookie cutter, cut out 48 circles from the dough.
  6. Place a teaspoon of apple pie filling on top of 24 dough circles. Cover with the remaining 24 circles of dough.
  7. Crimp the edges of the dough with a fork to seal the cookies.
  8. Arrange the cookies on the prepared baking sheets.
  9. Bake in the preheated oven for 23-29 minutes or until the cookies are golden brown.
  10. Let the cookies cool for 5 minutes on the baking sheets.
  11. To make the topping: In a shallow bowl, mix 2 tablespoons of sugar with 1 teaspoon of cinnamon.
  12. Roll the warm cookies in the sugar-cinnamon mixture until evenly coated.
  13. Transfer the cookies to a wire rack to cool completely.
