Lemon Pudding Pound Cake Recipe

Ingredients

  • 1 (15.25 ounce) package lemon cake mix
  • 1 (3 ounce) package instant lemon pudding mix
  • 4 large eggs
  • 1 cup water
  • cup vegetable oil

Directions

  1. Preheat your oven to 350F (175C). Grease and flour a 10-inch Bundt pan.
  2. In a large mixing bowl, combine the lemon cake mix, instant lemon pudding mix, eggs, water, and vegetable oil.
  3. Beat the mixture at medium speed for about 2 minutes until smooth and well combined.
  4. Pour the batter into the prepared Bundt pan, spreading it evenly.
  5. Bake in the preheated oven for 50 to 60 minutes. Check for doneness by inserting a toothpick into the center of the cake - it should come out clean.
  6. Allow the cake to cool in the pan for 10 minutes, then carefully remove it from the pan and let it cool completely on a wire rack.

After making some adjustments, I am now happy to give it a 5-star rating! I included the juice and zest of one lemon in the water to make up 1 cup, and also added 1-1/2 teaspoons of lemon extract.

Fantastic foundation, but I made a couple of tweaks to enhance the lemon flavor. Instead of using 4 eggs for the cake, I only used 3.
