Ingredients

This recipe was developed at its original yield. Ingredient amounts are automatically adjusted, but cooking times and steps remain unchanged. Note that not all recipes scale perfectly.

  • 10 fresh hot chile peppers, stems removed
  • 1 onion, coarsely chopped
  • cup pitted fresh dates, or more to taste
  • cup fresh basil leaves
  • cup fresh parsley leaves
  • 1 roma (plum) tomato, roughly chopped
  • 2 tablespoons beef bouillon powder
  • 4 garlic cloves
  • cup vegetable oil, or as needed
  • Salt to taste
  • 1 squeeze lemon juice

Directions

Step 1: Begin by placing the chile peppers, chopped onion, dates, basil, parsley, tomato, bouillon powder, and garlic into the bowl of a food processor. Add the vegetable oil and pulse the mixture until it is finely chopped. If the mixture is too thick, add more oil to thin it out. Season with salt to taste.

Step 2: Transfer the chopped pepper mixture to a small saucepan and bring it to a boil over medium heat.

Step 3: Once boiling, squeeze the lemon juice into the mixture, then reduce the heat to low. Let the mixture simmer for about 15 minutes.

Step 4: After the simmering time, remove the saucepan from heat and allow the pepper mixture to cool down.

Step 5: Once cooled, pour the pepper sauce into a glass jar with a tight-fitting lid. Store the sauce in the refrigerator.

Cook's Notes

The ingredient measurements in this recipe are just a starting point. Feel free to adjust them according to your personal taste. Don't feel confined to these exact amounts make it your own! For instance, I often skip the tomato and add extra lemon juice instead to create a more concentrated sauce. If you prefer a milder sauce, feel free to include tomatoes to your liking.

To preserve the sauce for a longer period, ensure it's fully covered with oil while stored in the fridge.
