I made this in a regular muffin pan, and it worked fabulous. I only had churro waffle mix at the time, and it worked great. I did not add syrup in the recipe since the churro mix had a sweet flavor. I thought about trying the mini & jumbo muffin pans next. This will be great to take to a potluck!

We are gluten free but loved McGriddles before we had to stop eating them. GF Flour is always a crapshoot as far as how much to use and how to modify recipes. Using 3 cups of GL Pancake mix is too much. So we are going to try this again (and will update our success...) with playing with the amount of pancake mix. We are also going to try the suggestion of using muffin pans instead of a 9x13 baking dish. This is a great recipe, we just need to work on it a bit for GF.
