Irish Potato Farls Recipe

Ingredients
- 4 medium potatoes, peeled and halved
- cup all-purpose flour, plus extra for dusting
- 1 tablespoon melted butter
- 1 pinch salt
Directions
- Step 1: Gather all ingredients and prepare your workspace.
- Step 2: Place the potatoes in a pot and cover them with water. Bring to a boil over high heat.
- Step 3: Reduce heat and simmer the potatoes on medium-high for about 20 minutes, or until the center of the potatoes is tender when pricked with a fork.
- Step 4: Turn off the heat, drain the water, and return the potatoes to the pot. Let them dry out for a few minutes using the residual heat from the pot.
- Step 5: Mash the potatoes with a potato masher until smooth.
- Step 6: Transfer the mashed potatoes to a medium bowl. Add flour, melted butter, and salt. Mix gently until a dough forms.
- Step 7: Lightly knead the dough on a well-floured surface. The dough will be sticky, so keep some flour on hand to prevent sticking.
- Step 8: Roll the dough into a 9-inch circle, about inch thick, using a floured rolling pin.
- Step 9: Cut the dough into quarters with a floured knife.
- Step 10: Sprinkle a little flour into a skillet and cook the farls on medium heat. Brown them evenly, about 3 minutes per side.
- Step 11: Sprinkle a pinch of salt over the farls and serve immediately.
