Easy Egg and Avocado Breakfast Burrito Recipe

Ingredients
- 6 eggs
- cup milk
- cup shredded Cheddar cheese
- Salt to taste
- 2 avocados - peeled, pitted, and mashed
- 4 (10-inch) flour tortillas, warmed
- cup dry curd cottage cheese
- cup ketchup
Directions
- In a bowl, beat together the eggs, milk, and shredded Cheddar cheese. Season with salt to taste. Pour the mixture into a skillet set over medium heat. Cook while stirring until the eggs are scrambled and cooked through.
- In a separate bowl, season the mashed avocados with salt.
- Place the tortillas one at a time in a separate skillet over medium heat, warming them just until soft. Do not overcook them.
- Spread a generous amount of the mashed avocado mixture on one side of each warmed tortilla.
- Top each tortilla with an equal amount of the cottage cheese and scrambled eggs.
- Roll the tortillas into burritos, folding the edges in as you go.
- Serve the burritos with a side of ketchup for dipping, or drizzle it over the top if you prefer.
