Simple French Toast in a Cup Recipe

  • 1 tablespoon butter
  • cup milk
  • 1 egg, beaten
  • teaspoon ground cinnamon
  • teaspoon white sugar
  • teaspoon vanilla extract
  • 2 slices bread, cut into cubes

Directions

  1. Place butter in the bottom of a large microwave-safe mug. Microwave for about 30 seconds until melted. Tilt the mug to coat all sides with the melted butter.
  2. In the same mug, stir together the melted butter, milk, beaten egg, cinnamon, sugar, and vanilla extract.
  3. Press the bread cubes into the milk mixture, making sure they soak up the liquid.
  4. Microwave on High for about 90 seconds or until the mixture is set and cooked through.

I'm on a diet, so I decided to make a few adjustments to the recipe. Instead of using butter, I opted for a couple of sprays of canola pan spray. I used skim milk, doubled up on the cinnamon and sugar but replaced sugar with Splenda. I added half a chopped banana to the mix, and used 100% whole wheat bread at 50 calories per slice. A final sprinkle of cinnamon and Splenda before microwaving gave it a delicious sweet crunch on top. This modified version totals around 250 calories, leaving room to also enjoy a juice or smoothie with it. You can get creative with different spices and mix-ins to suit your taste. I personally enjoyed the addition of fresh fruit, but nuts, chips, or dried fruits paired with other spice combinations would also be delightful. The best part is, you only need a cup and spoon to clean up when you're done!

Super simple and delicious! Maybe it's a bit unconventional, but I enjoy having peanut butter and syrup with my French toast. I decided to mix them in a bowl along with two additional ingredients. The result was perfect!

The experience was decent overall, but unfortunately, part of the bread was too soggy, which was quite unpleasant. My suggestion would be to stick to making traditional French toast for a better result.
