Ham and Cheese Breakfast Casserole Recipe
Ingredients
- 18 (1 ounce) slices white bread, cubed
- 8 ounces cooked ham, cubed
- 2 cups shredded Cheddar cheese
- 1 cups diced Swiss cheese
- 6 eggs
- 3 cups milk
- teaspoon onion powder
- 2 cups crushed cornflakes cereal
- cup butter, melted
Directions
- Lightly grease a 9x13-inch baking dish.
- Line the bottom of the prepared baking dish with of the bread cubes.
- Sprinkle the bread with cubed ham, Cheddar cheese, and Swiss cheese, then top with the remaining bread cubes.
- In a large bowl, beat together the eggs, milk, and onion powder until well combined.
- Pour the egg mixture evenly over the bread layers.
- Cover the dish and refrigerate overnight to allow the flavors to meld.
- The next day, preheat the oven to 375F (190C).
- In a small bowl, mix together the crushed cornflakes and melted butter.
- Spread the cornflake mixture evenly over the casserole.
- Bake in the preheated oven for about 40 minutes, or until the casserole is bubbly and golden brown.
- Let the casserole stand for 5 minutes before serving.

Substitute crushed canned onion rings for the corn flakes in this recipe. I omitted the onion powder and made this change. I also decreased the cheddar cheese by half a cup. The result was amazing, and everyone loved it so much that they all wanted the recipe to try at home!

I prepared this dish last night to have it for breakfast this morning. I adjusted the recipe to serve two people, but added an extra egg, making a total of 4. The only changes I made were toasting the bread cubes (using white burger buns instead) and including chopped chives by mistake. We didn't love the sweetness in the topping, so next time I might use regular breadcrumbs or consider using French fried onions as someone suggested. The combination of cheese and ham was delicious. I will definitely make this again and might try sautéing onions and peppers to add to the mix.

Became a favorite after making a few tweaks! Swapped bread for 1 1/2 packs of frozen O'Brien potatoes, increased eggs from 6 to 8, and used 3 cups of milk with 1/2 cup of half-and-half instead of 3 1/2 cups of milk. Added 1/2 cup diced green onions and another 1/2 cup of ham. Baked for around 50-55 minutes. This dish has been a hit at family gatherings and holiday events, with many requests for the recipe. I've shared it with at least 12 people in the last three years, and there's usually only a little left after serving.

I found this dish to be delicious! I prepared it for our Christmas Breakfast celebration. I made a few modifications: I opted for frozen shredded potatoes instead of bread, and I used French's Fried Onions in place of Cornflakes. Additionally, I added extra eggs and included a layer of chopped sweet onion. The cooking process took about an hour and a half. I popped it in the oven before we began opening our gifts, and it was ready by the time we finished. In the future, I would suggest using sliced ham instead of diced ham, for a better texture. Overall, it was well-received by everyone and paired wonderfully with a dash of Cholula sauce!

I have found this recipe to be consistently popular whenever I have prepared it, be it for my family or for larger gatherings. Preparing it the night before truly takes away any stress. I typically use 15 slices of bread and 7 eggs, and find that just 1/4 cup of melted butter is all that's needed. The end result is absolutely delicious!

I prepared this dish along with the Overnight Blueberry French Toast for a brunch, and while everyone loved both, there wasn't a single piece of this dish left! I decided to enhance it by adding some frozen O'Brien Potatoes with peppers and onions to the mix of ham and cheeses. I will definitely be making this dish again!

I followed a suggestion to add garlic powder, and it really enhanced the seasoning. Next time, I'll include more ham and less bread. This was a great way to use up leftover Easter ham!

I enjoy preparing this dish for weekends and holidays when we have guests as it prevents me from having to cook multiple dishes every morning.
