Overnight Christmas Breakfast Casserole Recipe

Original recipe (1X) yields 8 servings.

  • 16 slices bread, crusts removed, divided
  • 16 slices Canadian bacon
  • 16 slices sharp Cheddar cheese
  • 6 large eggs
  • teaspoon salt
  • teaspoon ground black pepper
  • 1 teaspoon dry mustard
  • cup minced onion
  • 2 tablespoons diced green bell pepper
  • 2 tablespoons diced red bell pepper
  • 2 teaspoons Worcestershire sauce
  • 1 dash hot sauce
  • 3 cups whole milk
  • cup butter, melted
  • 1 cup crushed corn flakes cereal

Directions

Step 1: Butter a 9x13-inch baking dish. Cut and fit 8 slices of bread to cover the entire bottom of the dish.

Step 2: Cover the bread with slices of Canadian bacon and sharp Cheddar cheese.

Step 3: Cut and fit the remaining 8 slices of bread to completely cover the bacon and cheese.

Step 4: In a bowl, whisk the eggs with salt and black pepper.

Step 5: Whisk in the dry mustard, minced onion, diced green and red bell peppers, Worcestershire sauce, and hot sauce into the egg mixture.

Step 6: Add the milk and whisk until the egg mixture is smoothly combined.

Step 7: Pour the egg mixture evenly over the casserole.

Step 8: Cover the dish and refrigerate overnight to allow the flavors to meld.

Step 9: Preheat the oven to 350F (175C).

Step 10: Once the oven is ready, pour the melted butter evenly over the casserole and sprinkle corn flakes over the top.

Step 11: Bake in the preheated oven until the casserole is set and lightly browned, about 1 hour.

Step 12: Let the casserole stand for 10 minutes before serving to allow it to set properly.

Cook's Note

There are many ways to personalize this dish. I like using red and green bell peppers because they add a festive touch, but you can easily add spinach instead. Additionally, I prefer using grated cheese and spreading it over the Canadian bacon instead of using cheese slices.

I stumbled upon this recipe while searching for ways to use up leftover corn flakes, and I must say, I absolutely love it! Since I'm not a morning person and I often host overnight guests, this dish is perfect for me. As an Italian, I sometimes substitute prosciutto, mozzarella, and basil for the Canadian bacon and cheddar. If you're a fan of tomatoes, consider adding sun-dried tomatoes instead of or alongside some of the peppers, as fresh tomatoes can make it too watery. I absolutely adore this casserole recipe and have been preparing it for many years. I make sure to always remove the crusts from the bread. Occasionally, I switch up the type of bread I use - sourdough, multigrain, or whatever I have on hand.
