Best Monkey Bread Recipe

Cook Time: 40 minutes

This sweet, sticky, gooey pull-apart bread, whimsically called "monkey bread," is a popular sharable treat for breakfasts, desserts, and snacks. Tasting like pull-apart sticky buns, monkey bread is easy to make with everyday pantry ingredients, and can be customized with add-ins like dried fruits, nuts, and spices to suit your tastes. And with thousands of ratings and reviews, this is one of our best monkey bread recipes of all time.

What Is Monkey Bread?

Monkey bread is a pull-apart bread made with bite-size pieces of dough coated with sugar and spice and baked with a buttery brown sugar sauce in a tube or Bundt pan. To serve monkey bread, invert it onto a large plate and let everyone pull it apart into individual pieces with their fingers or forks.

Why Is It Called Monkey Bread?

That's a good question without a definitive answer. Some say it's called monkey bread because you pick the bread apart with your fingers as though you're eating like a monkey, and some say it's because the baked monkey bread resembles the zigzag pattern of a monkey puzzle tree (Chilean pine).

Monkey Bread Ingredients

These are the ingredients you'll need for this monkey bread recipe:

  • Biscuit dough: This recipe uses cut-up pieces of canned biscuit dough as a convenient shortcut ingredient.
  • Sugar and cinnamon: Used to coat biscuit dough pieces both for flavor and to make them easier to pull apart after baking. You can substitute other ground spices such as cardamom or a pumpkin spice blend.
  • Walnuts (optional): You could substitute pecans or leave out the nuts altogether.
  • Raisins (optional): You could substitute dried cranberries or other small bits of dried fruit.
  • Margarine and brown sugar: Combined and briefly boiled to create the sweet caramel-like sauce that holds the monkey bread together. Many reviewers use butter instead of margarine. Be sure to pack down the brown sugar firmly into the measuring cup to get the correct amount. Some home cooks recommend adding about cup cream or milk to help keep the sauce soft even after it cools.

How to Make Monkey Bread

Follow the steps below for a delicious homemade monkey bread:

  1. Step 1: Preheat the oven to 350F (175C). Grease a 9-inch or 10-inch tube or Bundt pan.
  2. Step 2: In a plastic bag, mix together white sugar and cinnamon. Cut the biscuit dough into quarters. Shake 6-8 biscuit pieces at a time in the sugar-cinnamon mix until fully coated.
  3. Step 3: Arrange the coated biscuit pieces in the prepared pan. If you are using walnuts or raisins, sprinkle them in among the dough pieces as you go along.
  4. Step 4: In a small saucepan, melt butter and brown sugar over medium heat. Boil the mixture for 1 minute, then pour evenly over the biscuit dough.
  5. Step 5: Place the pan in the preheated oven and bake for about 35 minutes, or until the bread is golden brown and fully cooked through. If necessary, check with a toothpick to ensure the center is cooked.
  6. Step 6: Once baked, remove the pan from the oven and allow it to cool for 10 minutes. After cooling, invert the pan onto a plate and let everyone pull apart the pieces with their fingers or forks.

How to Serve Monkey Bread

Monkey bread is meant to be pulled apart and eaten with fingers or forks. Theres no need to slice it. It's best when served warm, with the sauce still soft and sticky, but it also tastes great when eaten cold.

How to Store Monkey Bread

Store the leftover monkey bread in an airtight in the refrigerator for up to three or four days. You can also freeze it for up to three months. To thaw, simply place it in the refrigerator overnight.

Tips from the Community

Fun to make & delicious to eat! I cut the recipe into and only used 1 can of biscuits in an 8" round cake pan. Cooked for about 20 minutes. My 2-year-old enjoyed helping me roll the balls. Also, previous reviewer suggested using a pizza cutter to cut the biscuits great shortcut, says Allrecipes home cook BBURG_HOKIES.

Scrumptious! I used frozen yeast roll dough to get a more homemade yeast bread flavor and the results were outstanding! You can make it the night before this way: Thaw 18 golf ball-size raw yeast rolls over about an hour. Once thawed, cut each in half. Follow the recipe for coating and layering. After pouring the brown sugar mixture over dough, place in cold oven overnight to rise. Follow baking instructions in the morning. Absolutely perfect! The entire extended family loved it! adds reviewer Stephanie C.

The only tips I could offer would be to make sure you dont press down on the dough balls once you get them in the pan, or else the sauce wont make it all the way through the loaf and get it all gooey and delicious on the inside. Also, Id make about 50 percent more sauce than the recipe calls for, because people seem to go for the parts that have the most sauce, says reviewer JenniJ3333.

12 oz is apparently not the only standard size of biscuit package, as I assumed it was. I thought I had way too many biscuit pieces, but I hadn't seen any mention of that in other reviews, so I thought it was normal. My packages were 16 oz, so I should have just used two. (using three was bad - pieces overflowing and falling out of the bundt pan as they baked, while the middle stayed raw)

Instead of biscuits I use cinnamon rolls (Pillsbury), cut into quarters and layered with pecans, raisins and some of the icing in a bunt pan. When finished baking I put the remaining icing on top. Its GREAT!

Hate to say it, but better than my family recipe. Easy to assemble and flavors are well balanced. Not a fan of raisins, so we remove those. Occasionally I will double the sauce to have a super caramelly cake. Just lay some down in the bottom of the pan with the nuts and with each layer of nuts so it gets all the way through and doesn't just have a pool at the top which will likely overflow.

Needs 6 stars! I used Stephanie's suggestion of frozen yeast roll dough, and preparing overnight, and then baking it in the morning. Served it at brunch to a group of 10 -- who raved and asked for the recipe. YUM.

I make this he night before so we can enjoy it every Christmas morning1 Added about 1/3 cup of heavy whipping cream as was suggested by another reviewer and it came out wonderful! I don't like the gritty texture that the sugar/cinnamon can leave on your mouth and the cream seemed to be the magical trick.

What an AMAZING recipe!! I used 4 tablespoons of butter instead of a full stick and 1/2cup of brown sugar instead of the full cup. I also toasted the walnuts, used Annie’s organic biscuits, and 1/4 cup of raisins. Perfect amount of sweetness w/o being too rich.

I love monkey bread! This is a simple recipe that tastes great, will definitely make it again. Used 2 cans small biscuits, a round glass baking dish , and added some pecans, omitted raisins. Great recipe!

Followed other reviewer suggestions to make 1.5 times the amount of butter and brown sugar mixture. Even with making extra "sauce" and not pushing down the dough, the sauce did not coat all the pieces. I would recommend laying half the dough pieces and adding the nuts/raisins. Then pour half the butter/sugar mixture. Layer with remaining dough pieces then top with remaining sauce. Baked for 5 min longer than listed, not sure this was necessary. Was worried the dough would be uncooked based on other recipes, but I believe the 35 min listed would be plenty. I used a bundt pan and walmart refridgerated biscuts.

I made monkey bread muffins. I followed the same recipe except I used parchment paper and my jumbo muffin pan. This allowed me to use various ingredients that some of the kids like (raisin and cranberries) and the nuts (pecan and walnuts) that my hubby and I love. I used one can of Walmart biscuits since it was an experiment. Everyone loved them! I cut the parchment paper in a t shape to allow the biscuits to rise and puff up as not to have any spillage in the bottom of the muffin cup. I spooned the brown sugar & mixture on each muffin. The aroma was delightful and filled the house! I'm making more in the morning.

This turned out perfect. I did add 1/4 cup evaporated milk to the brown sugar and butter mix to keep it from hardening as it cooled (per other reviews), but other than that, I didn’t change a thing. It was delicious.

It was really good. But the brown sugar and mixture turned almost to rock after cooling down.
