Spotted Dog Irish Bread Recipe
Ingredients

- 5 cups all-purpose flour
- 1 cups white sugar
- 2 tablespoons baking powder
- 2 eggs
- 2 cups milk
- 2 cups raisins
Directions
Step 1: Preheat the oven to 375F (190C).
Step 2: Grease a 12-inch cast iron skillet.
Step 3: Sift the flour, sugar, and baking powder together in a large bowl.
Step 4: In a separate bowl, beat the eggs with milk.
Step 5: Stir the egg mixture into the flour mixture until just moistened; the batter will be very thick.
Step 6: Gently fold in the raisins until fully combined.
Step 7: Spread the batter evenly into the prepared skillet.
Step 8: Bake in the preheated oven for about 1 hour, or until the bread has risen and is golden brown on top.
Cook's Note
If you prefer two smaller loaves, divide the batter into two greased 8-inch round cake pans and bake for 45 minutes.
