Campfire Skillet Breakfast Recipe
Ingredients
- pound sliced bacon
- 4 cups potatoes, peeled and cubed
- onion, chopped (Optional)
- 6 eggs, beaten
- 1 cup shredded Cheddar cheese
Directions
- Cook the bacon in a cast iron skillet over the slow-burning coals of a campfire until it reaches your desired level of crispiness. Once cooked, remove the bacon from the skillet and set it aside.
- In the same skillet, add the cubed potatoes and chopped onion (if using) into the hot bacon fat. Stir everything together, cover the skillet, and cook for about 10 to 12 minutes or until the potatoes are tender.
- Crumble the cooked bacon and add it to the potatoes. Stir in the beaten eggs, cover the skillet, and cook for an additional 2 minutes, or until the eggs are fully set.
- Sprinkle the shredded Cheddar cheese over the egg mixture and allow it to melt before serving. Enjoy!

I have been preparing this dish for nearly thirty years, mostly at home rather than while camping. I prefer using a large non-stick pan to prevent sticking issues that can occur with this recipe. Instead of cooking the bacon whole and then crumbling it, I find it more convenient to slice the entire pound of bacon (best done when well chilled) and separate it while cooking it with the onion. Additionally, frozen hash browns are a great option to use. I usually make a big batch, as it reheats wonderfully in the microwave. Some may find this recipe needing salt and a generous amount of pepper, however, I typically cook it without seasoning and let individuals add their own to taste.

Although we weren't camping, we still had a fantastic time making this at home. I opted to use my trusty cast iron skillet on the stovetop to whip up this dish. I decided to double up on the bacon, reduce the amount of potatoes, and throw in some fresh minced garlic, red bell pepper, and mushrooms. After cooking the potatoes to a delightful crisp, I tossed in the onion, garlic, bell pepper, and mushrooms. The result was a wonderfully satisfying breakfast that easily served the four of us (definitely not eight). To top it off, my husband and I added a dollop of homemade salsa, hot sauce, and sour cream for the perfect finishing touch.

The result was fantastic! My children absolutely adored it. I mostly stuck to the recipe, but since I had bell peppers on hand, I decided to include them with the onions just before adding the eggs. For an extra touch of flavor and presentation, I sprinkled some chopped chives on top.

A fantastic camping meal idea! We like to bake extra potatoes for dinner and chop them up to fry in the pan with bacon the next morning. The potatoes get a nice browning in the bacon fat and cook quickly since they are already cooked. Before adding the eggs, we remove some of the excess fat and maybe add a bit of butter to prevent sticking. The bacon fat may be greasy, but it adds an amazing flavor. I'm giving it 4 stars because it may not be the healthiest option, but it sure tastes delicious!

The first time I prepared this dish, it was an instant hit with my husband and kids! The second time, I decided to make a few tweaks, but it was still incredibly tasty. Today, I made it once more without bacon and eggs, and it turned out absolutely fantastic! This dish is simply wonderful in every way! It has become my go-to whenever we tire of our usual rice or pasta sides.

Every year during the Christmas season at our workplace, our production manager prepares a batch of these delightful eggs for the entire factory. He stores them in a large cooler and serves them up with a ladle, affectionately dubbing them "Cooler Eggs." It's always a crowd-pleaser and incredibly simple to enjoy!

Skillet breakfasts are essential for any camping trip! This dish is uncomplicated but oh-so-tasty. Who can resist the combination of bacon and potatoes? Just for presentation, I cooked my eggs separately and then mixed them in with the bacon and potatoes in the skillet to avoid it looking like a mess for my food photo! I admit, I'm one of those campers who also insists on styling their hair every morning. ;)
