Bacon and Potato Frittata with Greens Recipe

Ingredients

  • 6 slices bacon, chopped
  • 1 potato, peeled and sliced into thin 1-inch pieces
  • 2 tablespoons water, or as needed
  • 1 clove garlic, thinly sliced
  • teaspoon red pepper flakes
  • Salt and ground black pepper, to taste
  • 1 bunch Swiss chard, chopped
  • 8 eggs, beaten
  • cup grated Parmesan cheese

Directions

  1. Position the oven rack about 6 inches from the heat source and preheat the broiler.
  2. In a large oven-safe skillet, cook and stir the chopped bacon over medium heat until it is evenly browned and crispy, which should take about 10 minutes.
  3. Once the bacon is crisp, drain all but 1 teaspoon of the bacon grease from the skillet.
  4. Add the potato slices, water, garlic, red pepper flakes, salt, and black pepper to the skillet. Stir to combine. Cover the skillet with a lid and cook until the potatoes become tender, around 10 minutes.
  5. Once the potatoes are tender, stir in the chopped Swiss chard. Cook for an additional 2 to 3 minutes, just until the chard begins to wilt slightly.
  6. Pour the beaten eggs over the potato and chard mixture. Stir gently, ensuring the eggs distribute evenly throughout. Remove the skillet from the heat.
  7. Sprinkle the grated Parmesan cheese over the egg mixture.
  8. Place the skillet under the preheated broiler. Broil for 3 to 4 minutes, or until the eggs are set and the edges of the frittata are golden brown.

Very good and very versatile. I swapped sausage for bacon and frozen spinach for chard (that's what I had available) and it still worked out perfectly.

I love this recipe! It was a hit in my house, easy to make, and works as a base recipe for other versions. I made mine with small, yellow-fleshed potatoes, cheddar and spinach. As the potatoes were so lively, I sliced them in halves and pre-boiled them, so I could just throw them in the pan when my husband got home.

Great taste! This is one of the tastiest and easiest recipes for frittata I’ve made. I made a few substitutions (e.g., chicken sausage for bacon, asparagus for the greens and button mushrooms) and it all blended well. I made a fuller frittata with a 7” Lodge skillet, because I like a fuller product. Otherwise, I followed the recipe.

Always love frittata used chard for the greens. Added tomato's sliced to top. Added parm and a little shredded mozz, also some sauted onion with the sauted greens

Very good and very easy. I make a lot of Chef John’s recipes. Made this for dinner for meatless Monday, so I subbed mushrooms in for the bacon. I only had frozen spinach, which I thawed prior. Replaced parm with Swiss per personal preference. I used my cast iron skillet since that is my only oven safe pan. Flawless directions to make a lovely frittata. Will make again and switch it up depending on what ingredients I have at the time.

This is delicious! Word of advice, don't use a cast iron pan, like it shows in the image above though. It's too hot to cook the potatoes long enough, the bacon starts to burn. I had to transfer everything to another large skillet midway. That aside, this is so good, and really very easy. I used baby spinach I had on hand vs the swiss chard, and it worked great! Everyone gobbled it up for New Years Day brunch. Some even topped it with some hot sauce which was yummy also.

Very enjoyable and easy to make. Slightly adjusted the quantities to reflect using 6 eggs. I used frozen spinach instead of kale. I left out the chili flakes because my dining companions are able to tolerate them. I added them to mine after it was on my plated.

Delicious. I do not have an ovenproof pan/skillet so I cooked the ingredients except for the eggs in a pan and then I moved the cooked ingredients to a pie pan and poured the eggs over it. We made this for dinner and it was delectable. It took a little longer to cook in the pie pan and I cooked it at 375 then put the broiler on in the end to brown the top.

Only changed I made was to use spinach instead of Swiss chard. One thing I will do differently next time is to remove the bacon before adding the potatoes and then add it back in with the eggs at the end. My bacon got a little too crispy and a bit burned. But the taste and texture and everything was super. I agree with others this is very versatile, you could use other meats like ham or sausage. The potato was something I thought would be odd, but it was super!

This was amazing! My husband doesn't eat pork so I used thick cut turkey bacon and I added some chopped onions to the potatoes and spinach instead of the chard. I also added shredded cheddar cheese to the egg mixture. It was so good and I'm not big on eggs but I will definitely make this again. A new favorite!

Since asparagus is fresh in my garden, i used it instead of the greens, chopping it into bite size and using a bit more water to get it cooked just right. Didnt use red pepper flakes. It was soooo goid, the two of us almost ate it all. Prob would cook it a bit more on top the stove before broiler because it took longer then noted to get the eggs set

I made half a recipe and I substituted what I had and it was delicious. I used paprika, 1/2 bunch of kale and 6 oz frozen Obrian diced potatoes. Delicious!

As written, I didn't care for this recipe. The swiss chard was tough, and the eggs completely disappeared into it. Perhaps decrease the amount of chard & cook it longer? The seasoning depended far too much on hot pepper flakes. Having said that, my husband liked it. (Though he had just returned from an hour long run, and would have wolfed down anything I put in front of him)

Very tasty. I made it in a cast iron skillet. My oven has a high and low setting on the broiler. I used low and let it cook about 5 minutes more after turning the broiler off to cook all the way through. The top would likely burn on high.

This is an excellent recipe! I substituted frozen hash browns for the potatoes and added spinach. I think you can get creative with it and make it your own. It was so yummy! It was my first time making a frittata.

This is so easy and delicious.! The only change I made was I didn't have Swiss chard but I had some leftover roasted broccolini. So good!
