Ingredients

  • sweet onion, chopped
  • green bell pepper, coarsely chopped
  • cup fresh cilantro
  • 5 slices pickled jalapeo peppers, or to taste
  • 6 fresh tomatoes, quartered
  • 2 teaspoons olive oil
  • 2 teaspoons red wine vinegar
  • lime, juiced
  • 1 teaspoon salt

Directions

Step 1: Place onion, bell pepper, cilantro, and jalapeo peppers into a food processor. Pulse until finely chopped.

Step 2: Add tomatoes and pulse a few times until tomatoes are coarsely chopped.

Step 3: Transfer the mixture to a bowl with a tight-fitting lid.

Step 4: In a small bowl, whisk together olive oil, red wine vinegar, lime juice, and salt until the dressing is well combined.

Step 5: Pour the dressing over the tomato mixture and stir well.

Step 6: Cover and refrigerate for at least 1 hour before serving.
