Grilled Pineapple Mango Salsa Recipe

This fresh, vibrant grilled fruit salsa combines sweet and smoky flavors for a perfect summer side dish. Ideal for pairing with grilled meats or as a stand-alone snack, its easy to make and bursting with flavor!

Ingredients

  • 3 slices fresh pineapple
  • 1 red bell pepper
  • 1 jalapeo pepper
  • 2 large mangos, peeled, seeded, and diced
  • 1 small red onion, diced
  • cup chopped cilantro
  • 1 lime, juiced
  • teaspoon lime zest

Yield: 12 servings

Directions

Step 1: Preheat an outdoor grill to medium-high heat and lightly oil the grate.

Step 2: Place pineapple, red bell pepper, and jalapeo pepper on the grill. Cook, turning occasionally, until the pineapple has mild grill marks and the peppers are browned on all sides. This should take about 3 minutes for the pineapple and 5-7 minutes for the peppers.

Step 3: Carefully remove the grilled ingredients from the grill. Place the peppers in a paper bag to cool.

Step 4: Once the peppers have cooled, gently rub off their skins using paper towels. Cut them in half, remove and discard the seeds.

Step 5: Dice the cooled pineapple and peppers into small pieces and transfer them into a large bowl.

Step 6: Add the diced mango, red onion, chopped cilantro, lime juice, and lime zest to the bowl. Stir everything to combine well.

Step 7: Cover the bowl with plastic wrap and refrigerate for 8 hours to 1 day before serving. The flavors will meld together beautifully as it chills.

Tips

Feel free to experiment by adding other fruits like grapes, apples, dried cranberries, cantaloupe, honeydew melon, or even watermelon. Just be sure to balance the sweetness with a bit of lime or lemon juice. Have fun with it!
