Guacamole with Corn

Ingredients

  • 3 large avocados - peeled, pitted, and mashed
  • 1 lime, juiced
  • Salt to taste
  • 1 large plum tomato, seeded and chopped
  • white onion, chopped
  • 1 serrano chile, seeded and finely chopped
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon olive oil
  • 1 (8.75 ounce) can whole kernel corn, drained and rinsed

Directions

  1. Step 1: In a medium bowl, mash the avocados with lime juice and salt.
  2. Step 2: Add the chopped tomato, onion, serrano chile, and olive oil. Mix well.
  3. Step 3: Gently fold in the rinsed corn kernels.
  4. Step 4: Serve immediately and enjoy your fresh guacamole with corn!
