Easy Marinated Artichokes Recipe
Ingredients

- 1 lemon, juiced
- 2 tablespoons extra-virgin olive oil
- 2 cloves garlic, chopped (Optional)
- 1 teaspoon Italian seasoning
- 1 teaspoon salt, or to taste
- 1 teaspoon ground black pepper, or to taste
- 1 (14 ounce) can quartered artichoke hearts, drained
Directions
Step 1: In a jar, combine the lemon juice, olive oil, garlic (if using), Italian seasoning, salt, and black pepper. Seal the jar tightly and shake it well until the oil and lemon juice emulsify into a smooth mixture.
Step 2: Remove the lid and add the drained artichoke hearts to the jar. Seal it again and shake thoroughly until the artichokes are completely coated with the dressing.
Step 3: Serve the artichoke hearts immediately for a fresh, tangy flavor. Alternatively, if you prefer them chilled, place the jar in the refrigerator and allow it to chill for at least 1 hour before serving.

I prepared this dish as a part of a charcuterie tray for a brunch and it was a huge hit. The ladies at the brunch loved it so much that now they ask for a full tray of these artichokes every time. I used to buy expensive marinated artichokes, but not anymore. These homemade ones are so simple to make and taste much better. To make them, I bought whole artichokes, cut them in half, marinated them, and then roasted them at 425 degrees until they had a nice char. It didn't take long to get them just right. Now, marinated and roasted artichokes have become a regular item in our home. We buy 28 oz. cans of artichokes each week, marinate them, roast them, and refrigerate them for snacking or as side dishes. They pair well with almost anything. I'm grateful for this recipe, it's absolutely perfect.

What a phenomenal recipe!! I was blown away by how simple it was to prepare, yet how incredibly tasty the end result turned out to be. The only alteration I made was omitting the lemon juice due to running out of it. Instead, I substituted 3 tablespoons of red wine vinegar. When I woke up this morning to sneak a little taste test, I nearly devoured the entire batch. They were supposed to be my lunch, but the temptation was too strong!

This recipe is so easy to make and absolutely delicious. You can easily adjust the ingredients to suit your taste preferences. I used a 14oz can of quartered artichokes and halved the other ingredients, and the result was fantastic - full of bold and wonderful flavors. Thank you!

I'm writing this review based on the ease of preparation and the lovely outcome of my two jars of artichokes. As I gave them away as Mother's Day gifts, I can't comment on the taste yet. I used 4 cans of quartered artichokes, 1 1/2 lemons, 4 tablespoons of olive oil, salt and pepper, 2 teaspoons of Italian seasoning, and 4 cloves of crushed garlic. The presentation in the jar was fantastic, resembling store-bought ones. I'll update my review once I receive feedback on the taste. Update 5/18/12: I received my first taste review from my mom, who couldn't stop raving about these artichokes. She tried them last night and described them as perfectly seasoned and tangy. After marinating for a little over 2 weeks, the flavors have only improved.

These artichoke hearts are truly exceptional! I initially intended to use them in tonight's dinner salad, but they are so delicious that I can't stop snacking on them. I decided to add a teaspoon of Calabrian Chile paste for an extra kick, and it elevated the flavor beautifully. In my opinion, the flavor closely resembled artichoke hearts combined with a generous amount of Italian dressing. It was enjoyable, although I anticipated a more intricate taste profile. I suggest reducing the salt and Italian seasoning, as they tended to dominate the overall flavor.

Followed the recipe exactly as written and it turned out fantastic. Way better than anything you could buy at the store. Really delicious. Next time, I might reduce the amount of dried ingredients by 15-20% as the flavor is quite bold for my taste (but it's still great as it is). I purchased a double pack of artichoke hearts at Sam's Club with the intention of marinating them myself. My first attempt without a recipe didn't go well, so I was thrilled to come across this one. A tip - the artichokes from Sam's Club are very tender, so I suggest arranging them in a container and pouring the marinade over them for the best results.
