Cauliflower Soup with Stilton Cheese

This creamy and savory cauliflower soup is a perfect blend of vegetables, rich cream, and the tangy flavor of Stilton cheese. A great option for a warming meal!

Ingredients

  • 1 head cauliflower, chopped
  • 1 tablespoon vegetable oil
  • 3 stalks celery, chopped
  • 1 leek, chopped
  • 1 yellow onion, chopped
  • 2 cloves garlic, chopped
  • 2 cups chicken broth
  • 1 baking potato, thinly sliced
  • cup dry sherry
  • 1 teaspoon white pepper
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • cup milk
  • cup heavy cream
  • 3 ounces Stilton cheese
  • cup chopped fresh parsley

Directions

  1. Separate cup of cauliflower florets and place them in a pan of boiling water. Boil for 2 to 3 minutes, then rinse under cold water and set aside for garnish.
  2. Heat oil in a large saucepan over medium heat. Add celery, leek, onion, and garlic. Cook and stir for about 5 minutes, or until tender.
  3. Add the chicken broth, remaining cauliflower, sliced potato, and sherry to the pan. Bring to a boil, then reduce heat to low and simmer, stirring occasionally, until the potatoes and cauliflower are tender (about 15 minutes).
  4. Remove the pan from heat. Pure the cauliflower mixture in batches using a food processor or blender, then transfer it to a soup pot over medium-low heat.
  5. Season the soup with white pepper, black pepper, and salt. Stir in the milk and cream until well combined.
  6. Crumble in the Stilton cheese and stir until it melts into the soup. Heat through, but avoid boiling.
  7. Ladle the soup into bowls, and garnish with the reserved cauliflower florets and chopped fresh parsley.
