Cauliflower Soup with Stilton Cheese
This creamy and savory cauliflower soup is a perfect blend of vegetables, rich cream, and the tangy flavor of Stilton cheese. A great option for a warming meal!
Ingredients
- 1 head cauliflower, chopped
- 1 tablespoon vegetable oil
- 3 stalks celery, chopped
- 1 leek, chopped
- 1 yellow onion, chopped
- 2 cloves garlic, chopped
- 2 cups chicken broth
- 1 baking potato, thinly sliced
- cup dry sherry
- 1 teaspoon white pepper
- 1 teaspoon black pepper
- 1 teaspoon salt
- cup milk
- cup heavy cream
- 3 ounces Stilton cheese
- cup chopped fresh parsley
Directions
- Separate cup of cauliflower florets and place them in a pan of boiling water. Boil for 2 to 3 minutes, then rinse under cold water and set aside for garnish.
- Heat oil in a large saucepan over medium heat. Add celery, leek, onion, and garlic. Cook and stir for about 5 minutes, or until tender.
- Add the chicken broth, remaining cauliflower, sliced potato, and sherry to the pan. Bring to a boil, then reduce heat to low and simmer, stirring occasionally, until the potatoes and cauliflower are tender (about 15 minutes).
- Remove the pan from heat. Pure the cauliflower mixture in batches using a food processor or blender, then transfer it to a soup pot over medium-low heat.
- Season the soup with white pepper, black pepper, and salt. Stir in the milk and cream until well combined.
- Crumble in the Stilton cheese and stir until it melts into the soup. Heat through, but avoid boiling.
- Ladle the soup into bowls, and garnish with the reserved cauliflower florets and chopped fresh parsley.
