Memphis BBQ Pork Totchos Recipe
Ingredients
This recipe was originally created to serve 6. While quantities can scale, cooking times and methods remain the same. Note: not all recipes scale perfectly.
- 1 (28 ounce) package frozen bite-size potato nuggets (e.g., Extra Crispy Tater Tots)
- 2 cups shredded Pepper Jack cheese
- 2 cups cooked pulled pork
- cup chopped white onion
- cup chopped pickled jalapeo peppers
- cup barbecue sauce (e.g., Cattlemen's)
- 1 cup prepared coleslaw (optional)
- 1 bunch green onions, sliced
Directions
Step 1: Preheat your oven to 425F (220C). Spread the potato nuggets in a single layer on a baking sheet.
Step 2: Bake for 20 minutes, then gently shake the baking sheet and continue baking for another 20-24 minutes until the nuggets are extra crispy.
Step 3: Remove the tray from the oven and switch on the broiler. Layer the crispy potato nuggets with Pepper Jack cheese, pulled pork, chopped onion, and jalapeo peppers.
Step 4: Drizzle barbecue sauce evenly over the loaded nuggets.
Step 5: Broil for 5-7 minutes, or until the cheese begins to bubble and lightly brown.
Step 6: Top with coleslaw and sliced green onions before serving.
Cook's Notes
- For pulled pork, I use a dry-rubbed pork shoulder cooked in a slow cooker. After cooling, pull the meat by hand into chunks, chop lightly with a cleaver, and finish in a hot grill pan to add crispy edges and reduce excess fat.
- Extra crispy potato nuggets are essential to prevent soggy "totchos" when layered with toppings.

It was amazing! The only suggestion I have is to bake the tater tots separately to ensure they all stay crispy.
