This particular recipe is for that fake tasting NACHO CHEESE that we all love. The cheese that we get poured over chips at a ballgame or at the movies. I repeat...this is NACHO CHEESE... as clearly mentioned in the name of the recipe. I am a nacho connoisseur and i take offense when people confuse nacho cheese with cheese sauce or simple melted cheese. Anyways, I made this cheese, and it gets my stamp of approval as homemade nacho cheese- ESPECIALLY since you can't get nacho cheese tasting nacho cheese from the grocery store- only Costco. Easy but bland as written. Added fresh cracked pepper and 4 T pickled jalapeño juice while melting and 1/4 C. Grated Parmesan. Better than Velveeta Rotel and easier to make with ingredients almost always on hand.

This is a good nacho cheese recipe, but I made some changes just for fun. I made the sauce as directed and added the following. 12 slices of cheese, 1lbs Hamburger that I browned off with diced Onions and minced Garlic. Diced Jalapeños “to taste” and 1-2 tablespoons of the jalapeño liquid. 1/2tsp Garlic powder, 1/2tsp Onion powder, 1/2tsp Cumin, 1/2tsp Spicy Paprika and S&P to taste. My version lasted all of about 5 mins before my family devoured it. Some ate it on chips and some ate it on Tater Tots. My brother even wants me to make it again tomorrow with tacos.

This is ridiculously easy to make (I did it in my microwave)! I love it! However, I didn't use any flour. After my first try, I added some left over taco meat and diced jalapenos, it was drool-worthy! I did the same in a huge crock pot and took it to a party, (probably went through 50+ cheese slices, 6 or 7 jalapenos and a pound of taco beef). I didn't have any left-overs :( Next time I'm gonna try to add some sour cream to keep it more melty for longer. Crock pot is definitely the way to go!

I used a 2 Ib block of american cheese and dried chopped onions and added olive oil with unsalted butter. Once melted added diced tomatoes, red onions, black olives, fresh diced jalapenos and chopped bacon! Nice sideline game munchie ....... Go Chargers!

I give this recipe 3 stars for the base of the recipe (flour, milk, and butter). To give it the color and consistency I added more singles ( about 10-12 in total) and a 9oz can of "Fritos" cheddar cheese with a pinch of garlic salt and Chipotle salt, with this added this cheese sauce became top tier.

This is a great basic cheese sauce. Perfect for broccoli, mac and cheese, topping french fries, chopped cheese sandwiches, your burrito or enchilada, or nacho chips too. It's just American cheese flavor. To make this spicy, I ended up adding some diced Hatch chilies, some hot Hungarian paprika, and cayenne pepper. I used this for a breakfast quesadilla and it was oh so fantastic. This is mellow and basic as it is, but it's a solid base to build on and make it your own. This blows Velveeta cheese sauce in the pouch or any canned cheese product away. Try this for your next Ro-Tel dip. Put it up against Velveeta, taste test it for yourself. This is smooth, creamy, and coats the tongue in delicious cheesy goodness. I only made a quarter of this recipe and it scaled down easily and was so tasty. I used it to smother a breakfast burrito and some fried O'Brien potatoes and it made the dish so delicious that I didn't want to stop eating. UPDATE 8-05 I made this for a taco bar party and added in a can of Ro-tel, a can of diced Hatch green chiles, cayenne pepper powder, ancho pepper powder, and some Hot hungarian paprika, and this was a huge hit. I got raves from everyone who ate it. My sister in law asked me for the recipe because we all wanted Ro-Tel dip without Velveeta, and I told her I could do it, and yes I did. That American cheese is the secret to a perfect melt without graininess or the oiliness cheddar brings. I did shred in some extra sharp cheddar too for flavor, but it was only about an ounce or so because I found a small chunk in the deli drawer in my fridge. That stuff was 5 star good. If you are looking for a fancy gourmet cheese dip, keep looking. If you want a stadium, movie theater fake cheese dip this is your recipe. I did make a few changes: I used an entire can of evaporated milk, used block extra sharp cheddar cheese (used shout 10oz) cut into cubes. Once the cheese was melted and everything combined I put in the salt in the recipe and roughly 1-2 teaspoons of smoked and combined. Exactly what I was looking for.

When the directions say "thicken", do it! I had only thickened a little and result was a tasteless sauce with the same consistency as stadium nacho cheese. After I thickened the sauce more by keeping it on medium heat and stirring *constantly*, I had reduced it to a much thicker consistency, which resulted in a great flavor coming out! (It's definitely easier / less prone to burning if one thickens the milk mixture before adding cheese.)
