Easy Lasagna Cups Recipe

Cook Time: 55 minutes

Ingredients:

  • 1 pound lean ground beef
  • 1/2 cup finely chopped onion
  • 1 (24 ounce) jar prepared marinara sauce
  • 4 teaspoons kosher salt, divided
  • 3/4 teaspoon freshly ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 (12 ounce) package jumbo pasta shells
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese, divided
  • 2 cups shredded mozzarella cheese
  • 2 tablespoons finely chopped fresh parsley (optional)

Directions:

  1. Preheat the oven to 375F (190C). Lightly grease a mini muffin pan.
  2. Bring a large pot of water to a boil over high heat.
  3. In a large deep skillet, heat over medium-high heat. Add the ground beef and cook, crumbling it with a spoon, until browned (about 5-7 minutes). Drain any excess grease.
  4. Add the chopped onion and cook for another 3-4 minutes until softened.
  5. Stir in the marinara sauce, 1 teaspoon of salt, black pepper, garlic powder, and Italian seasoning. Bring the mixture to a simmer, then reduce the heat and cook for 20 minutes, stirring occasionally.
  6. In the boiling water, add the remaining 3 teaspoons of salt and the pasta shells. Cook, stirring occasionally, for 10-12 minutes until the pasta is tender. Drain and rinse the shells with cold water to stop the cooking process. Drain well.
  7. Turn each pasta shell inside out and place 24 shells into the prepared muffin pan. Set aside any broken shells for future use.
  8. Fill each shell with approximately 2 teaspoons of ricotta cheese. Sprinkle 1/4 cup of Parmesan cheese evenly over the ricotta in each shell.
  9. Top each filled shell with about 1 tablespoon of the meat sauce, followed by an even layer of shredded mozzarella and the remaining Parmesan cheese.
  10. Bake in the preheated oven for about 15 minutes or until the edges are golden and the cheese is bubbly inside.
  11. Let the stuffed shells rest for 10 minutes before serving. If desired, sprinkle with chopped fresh parsley for an added touch of color and flavor.

The Story Behind Lasagna Cups

Lasagna, in its traditional form, dates back to medieval Italy, evolving from layered pasta dishes popular in the 14th and 15th centuries. The concept of lasagna cups is a modern adaptation, designed for convenience and portion control. Instead of baking a large tray, individual servings are created using jumbo pasta shells turned inside out, filled with layers of meat, cheese, and sauce. This innovation maintains the flavors of classic lasagna while offering a more playful, appetizer-friendly presentation.

Regional Variations

While traditional lasagna originates from Emilia-Romagna in northern Italy, lasagna cups have become popular across the globe, especially in North America. In Italy, variations might include bchamel sauce and a mix of pork and beef, whereas American versions often feature ricotta, mozzarella, and tomato-based sauces. Some regions add unique twists, such as fresh herbs from Tuscany or a spicier sausage mix found in southern Italian-American communities.

How They Differ From Similar Dishes

Unlike traditional baked lasagna, which is served in slices, lasagna cups are individual portions, often baked in muffin tins. They differ from stuffed pasta dishes like manicotti or cannelloni in preparation and presentation: shells are turned inside out to create a crispy edge that mimics the beloved crunchy corners of a full lasagna. This technique emphasizes both texture and convenience, allowing easier serving at parties or casual gatherings.

Typical Serving Occasions

Lasagna cups are versatile and often served as appetizers, party finger foods, or even as part of a buffet. Their individual size makes them ideal for social gatherings, potlucks, or family dinners where guests can enjoy a taste of lasagna without committing to a large slice. They are also popular in casual dining restaurants as a creative twist on the classic Italian dish.

Interesting Facts

  • The inside-out pasta shell technique helps achieve the crispy edges that many people love in lasagna without overcooking the interior layers.
  • Lasagna cups can be easily adapted to vegetarian or gluten-free diets by substituting meat with roasted vegetables or using gluten-free pasta shells.
  • This dish exemplifies the trend of deconstructed classics, where traditional recipes are reimagined into convenient, modern portions.
  • Despite being a modern invention, lasagna cups capture the essence of homemade Italian comfort food while providing a visually appealing presentation.

It looks awesome and much easier than making a huge lasagne. Will be using again. And again. A great idea

Delicious! I cooked up 3 of these hot Italian sausage links instead of ground beef and it was perfect! Used a regular-sized muffin tin just fine. The tricky part is cooking the shells long enough so you can easily turn them inside out.
