Rotel Dip with Sausage Recipe
Ingredients
- 1 pound premium bulk sausage
- 1 pound processed cheese food (such as Velveeta), cubed
- 1 (10 ounce) can diced tomatoes with green chilies (such as RO-TEL Original), undrained
Directions
- Heat a large skillet over medium-high heat. Add the sausage and cook, stirring occasionally, until browned and crumbly. Use a spatula to break the sausage apart while it cooks, approximately 10 minutes.
- Once the sausage is cooked, drain excess grease and return the sausage to the skillet.
- Add the cubed Velveeta cheese and undrained RO-TEL tomatoes with green chilies to the skillet. Reduce the heat to medium.
- Stir the mixture occasionally and cook for about 15 minutes, or until the cheese has completely melted and the ingredients are well combined. Stir every 5 minutes to ensure even melting.
- If you prefer a thinner dip, add a splash of half and half during the last 5 minutes of cooking to reach the desired consistency.
- Once everything is fully melted and mixed together, remove the skillet from heat and serve immediately.

The Story Behind Rotel Dip with Sausage
Rotel Dip with Sausage has its roots in mid-20th century Texas, where Tex-Mex cuisine began blending traditional Mexican flavors with American ingredients. The original Rotel brand, introduced in 1945, offered canned diced tomatoes with green chilies, which quickly became a pantry staple for home cooks seeking quick, flavorful dishes. Combining Rotel with Velveeta cheese created a smooth, creamy dip that was both affordable and crowd-pleasing. The addition of sausage, often spicy or seasoned, elevates the dip from a simple snack to a hearty appetizer or party dish.
Regional Variations
This dip is particularly popular in the Southern United States, especially in Texas and Louisiana. In Texas, sausage is typically spicy, reflecting the region's love for bold flavors. Some variations include adding jalapeos, bell peppers, or onions, while in Louisiana, smoked sausage or Andouille might be used for a richer, smokier taste. While the base ingredients remain consistent, local adaptations emphasize either heat, smokiness, or creaminess, giving each regional version a distinct personality.
How It Differs from Similar Dishes
While Velveeta and Rotel dips are common, the addition of sausage sets this recipe apart. Traditional queso dips often rely solely on cheese and chilies, whereas this dish introduces protein and texture through crumbled sausage. Unlike chili con queso, which is generally thinner and served hot with tortilla chips, Rotel Dip with Sausage is thicker and can be eaten with chips, bread, or even used as a topping for baked potatoes and nachos. Its versatility and heartiness make it more substantial than many other cheese dips.
Typical Occasions and Serving Suggestions
Rotel Dip with Sausage is a staple at game day parties, holiday gatherings, and casual get-togethers. It is often served in a heated dish or slow cooker to keep it melty and warm throughout the event. Chips, crackers, or sliced vegetables are common accompaniments, but some families enjoy it as a meal over rice or with soft tortillas. Its crowd-pleasing nature makes it a go-to appetizer whenever a simple, flavorful dish is needed for entertaining.

Maybe a little less sausage and I added a couple tablespoons of sour cream rather than Half and Half. Be sure to break up the sausage well into nice crumbly bits

Make this every year for Christmas Eve. Family loves it! Well one year, I decided to make something else. I will never do that again! Everyone was so disappointed - you would have thought the Christmas was cancelled. LOL - The only modification I made, was I uses Bob Evans Zesty Sausage (in the red roll).
