These deviled eggs combine the classic creamy richness of egg yolks with the smoky heat of chipotle, and a crispy bacon twist. Perfect as an appetizer or party snack, they're easy to make and guaranteed to impress!
Ingredients
- 6 large hard-boiled eggs
- 2 slices cooked bacon
- 3 tablespoons mayonnaise
- 1 tablespoon adobo sauce (from a can of chipotle peppers)
- 1/4 teaspoon dry mustard
- 1/4 teaspoon garlic powder
- Salt and freshly ground black pepper to taste
- 1/2 teaspoon ground chipotle powder, or as needed
Directions
- Halve the eggs lengthwise, removing the yolks and placing them in the bowl of a mini food processor. Set the egg whites aside. If you dont have a food processor, you can mash everything with a fork in a bowl.
- Chop 1 slice of bacon finely and add it to the egg yolks. Slice the second slice into 12 small pieces for garnish, and set aside.
- Add the mayonnaise, adobo sauce, dry mustard, and garlic powder to the yolks. Blend everything together until smooth. Be sure to scrape down the sides of the bowl for even mixing. If the mixture seems too thick, add an extra tablespoon of mayonnaise.
- Season the mixture with salt and pepper to taste.
- Transfer the yolk mixture into a resealable bag, and snip off one corner to create a piping bag.
- Pipe the yolk mixture into the halved egg whites, filling them generously.
- Sprinkle the filled eggs with ground chipotle powder for extra flavor, and top each with a piece of the reserved bacon.
- Refrigerate the deviled eggs until you're ready to serve them. Enjoy!
