Winter Solstice Soup Recipe
Cook Time: 45 minutes
Ingredients:
- 2 tablespoons margarine
- 2 onions, chopped
- 2 carrots, shredded
- 2 potatoes, peeled and cubed
- 3 cups water
- 1 tablespoon dried parsley
- 1 teaspoon salt
- teaspoon dried thyme
- 1 bay leaf
- 2 cups milk
- Salt and pepper to taste
Directions:
- Melt margarine in a large pot over medium heat. Add chopped onions and saut until they become tender, about 5 to 10 minutes.
- Add shredded carrots and cubed potatoes to the pot. Stir them in with the onions.
- Pour in the 3 cups of water, then season the mixture with dried parsley, salt, thyme, and add the bay leaf.
- Reduce the heat to low and let the soup simmer for about 30 minutes, stirring occasionally. Remove the bay leaf when done.
- Pure the soup in small batches using a blender or food processor, then return the blended soup to the pot.
- Stir in the 2 cups of milk and mix thoroughly. Taste and adjust seasoning with salt and pepper as needed.
