Winter Solstice Soup Recipe

Cook Time: 45 minutes

Ingredients:

  • 2 tablespoons margarine
  • 2 onions, chopped
  • 2 carrots, shredded
  • 2 potatoes, peeled and cubed
  • 3 cups water
  • 1 tablespoon dried parsley
  • 1 teaspoon salt
  • teaspoon dried thyme
  • 1 bay leaf
  • 2 cups milk
  • Salt and pepper to taste

Directions:

  1. Melt margarine in a large pot over medium heat. Add chopped onions and saut until they become tender, about 5 to 10 minutes.
  2. Add shredded carrots and cubed potatoes to the pot. Stir them in with the onions.
  3. Pour in the 3 cups of water, then season the mixture with dried parsley, salt, thyme, and add the bay leaf.
  4. Reduce the heat to low and let the soup simmer for about 30 minutes, stirring occasionally. Remove the bay leaf when done.
  5. Pure the soup in small batches using a blender or food processor, then return the blended soup to the pot.
  6. Stir in the 2 cups of milk and mix thoroughly. Taste and adjust seasoning with salt and pepper as needed.
