Easy Tomato Bisque Recipe
Ingredients
This recipe yields 4 servings.
- cup butter
- 1 small onion, finely chopped
- 1 stalk celery, finely chopped
- 1 carrot, finely chopped
- 2 cloves garlic, minced
- 3 tablespoons all-purpose flour
- 4 cups chicken broth
- 2 (14.5 ounce) cans fire roasted diced tomatoes, drained
- 3 tablespoons white sugar, or to taste
- 3 tablespoons tomato paste
- teaspoon ground nutmeg, or to taste
- cup heavy cream
- Salt and black pepper, to taste
Directions
Step 1: Gather all the ingredients and have them ready.
Step 2: In a large saucepan, melt the butter over medium heat. Add the onion, celery, carrot, and garlic. Cook, stirring occasionally, for about 3 to 5 minutes until the vegetables become tender and start to brown.
Step 3: Stir in the flour and cook for an additional 1 minute, stirring constantly to prevent the flour from burning.
Step 4: Gradually pour in the chicken broth while stirring, followed by the tomatoes, sugar, tomato paste, and nutmeg. Bring the mixture to a boil over high heat, then reduce the heat to medium-low. Cover and let it simmer for around 10 minutes, or until the vegetables are very tender.
Step 5: Once the vegetables are tender, use a blender or food processor to puree the soup until it reaches a smooth consistency. You can also use an immersion blender directly in the saucepan if preferred.
Step 6: Stir in the heavy cream and return the soup to medium heat. Cook and stir until the bisque is hot throughout.
Step 7: Season the soup with salt and black pepper to taste before serving. Enjoy your creamy, flavorful bisque!
