Potato and Cheddar Soup Recipe
Ingredients

- 2 cups water
- 2 cups peeled and cubed red potatoes
- 3 tablespoons melted butter
- 1 small onion, chopped
- 3 tablespoons all-purpose flour
- Salt and pepper to taste
- 3 cups milk
- teaspoon white sugar
- 1 cup shredded Cheddar cheese
- 1 cup diced ham
Directions
- In a medium-sized stock pot, bring water to a boil.
- Add the peeled and cubed potatoes to the boiling water and cook until tender. Drain the potatoes, reserving 1 cup of the liquid.
- In the same pot, stir in the melted butter, chopped onion, and flour. Season with salt and pepper to taste.
- Gradually add the cooked potatoes, reserved liquid, milk, sugar, shredded Cheddar cheese, and diced ham to the pot. Stir well to combine all the ingredients.
- Let the mixture simmer for 30 minutes, stirring frequently to prevent sticking or burning.
