Potato and Cheddar Soup Recipe

Ingredients

  • 2 cups water
  • 2 cups peeled and cubed red potatoes
  • 3 tablespoons melted butter
  • 1 small onion, chopped
  • 3 tablespoons all-purpose flour
  • Salt and pepper to taste
  • 3 cups milk
  • teaspoon white sugar
  • 1 cup shredded Cheddar cheese
  • 1 cup diced ham

Directions

  1. In a medium-sized stock pot, bring water to a boil.
  2. Add the peeled and cubed potatoes to the boiling water and cook until tender. Drain the potatoes, reserving 1 cup of the liquid.
  3. In the same pot, stir in the melted butter, chopped onion, and flour. Season with salt and pepper to taste.
  4. Gradually add the cooked potatoes, reserved liquid, milk, sugar, shredded Cheddar cheese, and diced ham to the pot. Stir well to combine all the ingredients.
  5. Let the mixture simmer for 30 minutes, stirring frequently to prevent sticking or burning.
