Broccoli Soup Recipe
Ingredients
- 1 tablespoon olive oil
- 1 large onion, chopped
- 3 cloves garlic, peeled and chopped
- 2 (10 ounce) packages chopped frozen broccoli, thawed
- 1 potato, peeled and chopped
- 4 cups chicken broth
- teaspoon ground nutmeg
- Salt and pepper to taste
Directions
Step 1: Heat the olive oil in a large saucepan over medium heat.
Step 2: Add the chopped onion and garlic to the pan. Saut for 3-5 minutes, or until the onion becomes tender and translucent.
Step 3: Add the thawed broccoli, chopped potato, and chicken broth to the saucepan. Bring the mixture to a boil.
Step 4: Once boiling, reduce the heat to a simmer and cook for about 15 minutes, or until the vegetables are tender.
Step 5: Use an immersion blender to pure the soup directly in the saucepan. Alternatively, transfer the mixture to a countertop blender and blend until smooth.
Step 6: If needed, reheat the soup and season it with ground nutmeg, salt, and pepper to taste. Stir well before serving.
