Best Baked Potato Soup Recipe
Ingredients
- 9 baking potatoes
- cup butter
- cup all-purpose flour
- 6 cups whole milk
- tablespoon salt
- 1 teaspoon ground black pepper
- cup bacon bits, divided
- 4 green onions, chopped
- 10 ounces shredded Cheddar cheese
- 1 (8 ounce) sour cream
Directions
Step 1: Gather all the ingredients and set them aside for easy access during cooking.
Step 2: Prick the potatoes with a fork and cook them in the microwave, 3 or 4 at a time, until they become fork-tender. This should take about 7 to 8 minutes. Once cooked, let them cool enough to handle, then scoop out the flesh from the potatoes.
Step 3: In a large saucepan, melt the butter over medium heat. Once melted, stir in the flour and cook for about one minute, making sure its well combined.
Step 4: Gradually whisk in the milk, adding it in small amounts while stirring constantly. Continue stirring until the mixture thickens to your desired consistency.
Step 5: Stir in the scooped potatoes, salt, pepper, cup of the bacon bits, 2 tablespoons of the chopped green onions, and most of the shredded Cheddar cheese. Allow the mixture to heat through completely.
Step 6: Once heated, stir in the sour cream and allow it to heat through as well.
Step 7: Serve the soup hot, topped with the remaining bacon bits, green onions, and Cheddar cheese.
