Gazpacho

This refreshing, chilled soup is a classic summer dish that's both healthy and full of vibrant flavors. Perfect for hot days, it's quick to prepare and even better when left to chill for a couple of hours.

Ingredients

  • 4 cups tomato juice
  • 2 cups chopped tomatoes
  • 1 small onion, minced
  • 1 medium green bell pepper, minced
  • 1 cucumber, chopped
  • 2 green onions, chopped
  • cup chopped fresh parsley
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons red wine vinegar
  • 1 clove garlic, minced
  • 1 teaspoon dried tarragon
  • 1 teaspoon dried basil
  • 1 teaspoon white sugar
  • Salt and pepper to taste

Directions

  1. Start by gathering all the ingredients. This will make the preparation process smoother.
  2. In a blender or food processor, combine the tomato juice, chopped tomatoes, minced onion, bell pepper, cucumber, green onions, parsley, lemon juice, red wine vinegar, minced garlic, tarragon, basil, sugar, salt, and pepper.
  3. Blend everything together until well combined, but still slightly chunky. You want some texture to remain in the soup.
  4. Transfer the mixture to a serving bowl and cover it with a lid or plastic wrap.
  5. Place the bowl in the refrigerator and chill for at least 2 hours before serving. The flavors will intensify as it cools.
  6. Once chilled, serve your gazpacho in bowls, and enjoy the refreshing taste of summer!

This was a fantastic healthy discovery! I opted for convenience and used canned diced tomatoes, but the dish still turned out delicious. I decided to add a jalapeno pepper for some heat, swapped tarragon for cilantro, and skipped the parsley.

I followed the suggested modifications from another review such as cooking garlic in olive oil, skipping herbs except for basil, blanching tomatoes, removing cucumber seeds, and more. I also added a touch of red chili flakes, a sprinkle of cayenne pepper, and half a small container of Dei Fratelli Finely Chopped Tomatoes. The result was absolutely delicious... I highly recommend trying out this recipe!

I used the food processor to chop all the veggies and then mixed all the liquids separately. To create more space in the food processor, I switched the blade and added the veggies to chop them from fine to chunky consistency, slowly incorporating the liquids. I also swapped out parsley and tarragon for 1/2 cup of chopped cilantro.

As noted by previous reviewers, I found that this recipe turns out best when the vegetables are not fully blended in the blender. I prefer to chop the vegetables (including a red bell pepper) and add extra garlic before combining all the ingredients. I suggest scooping half of the mixture into the blender for pureeing, then combining it with the remaining chopped vegetables for a better consistency. I recommend topping it off with a dollop of sour cream for an extra touch!

Absolutely fantastic! I used cilantro instead of tarragon, finely chopped all the ingredients without blending them. The chunky texture was delicious. Served it with sour cream and croutons. This recipe is a winner!

I prepared this in August 2021 as a refreshing drink/snack for a hot summer day. I added a jalapeño pepper and used Spicy Hot V-8 tomato juice. Now, on December 29th, just the thought of it makes me crave it! Thank you so much!
