French Onion Soup with Celeriac Recipe

Cook Time: 120 minutes

Ingredients:

  • 1 head garlic
  • 1 teaspoon olive oil
  • Salt, to taste
  • cup butter, softened
  • 2 tablespoons olive oil
  • 2 tablespoons butter, melted
  • 3 large sweet onions, chopped
  • 1 celeriac (celery root), chopped
  • 2 cups beef broth
  • 1 cup dry red wine
  • 2 cups vegetable broth
  • 1 head garlic, chopped
  • 2 teaspoons paprika
  • 2 tablespoons dried parsley
  • Cajun seasoning, to taste
  • Salt and pepper, to taste
  • 1 loaf French bread, toasted and sliced
  • 1 cup shredded Swiss cheese

Directions:

  1. Preheat oven to 425F (220C).
  2. Slice the top off the head of garlic. Drizzle with 1 teaspoon olive oil and season with salt. Wrap it loosely in foil and bake for 45 minutes, or until the cloves are very soft.
  3. Once baked, squeeze the garlic cloves into a small bowl and mix with the cup softened butter. Set aside.
  4. In a large pot, heat 2 tablespoons of olive oil over medium heat. Add 2 tablespoons of melted butter and stir until blended.
  5. Add the chopped onions and celery root to the pot. Saut until the onions are lightly browned.
  6. Reduce heat to medium-low and add the beef broth, red wine, and vegetable broth to the pot. Stir in the chopped garlic.
  7. Season the mixture with paprika, dried parsley, Cajun seasoning, salt, and pepper. Simmer for 1 hour, stirring occasionally.
  8. Preheat the oven broiler. Spread the toasted bread slices with the garlic butter mixture.
  9. Pour the soup into oven-safe bowls and place the bowls on a baking sheet. Top each bowl of soup with one slice of toasted bread and sprinkle with shredded Swiss cheese.
  10. Broil the soup for about 5 minutes, or until the Swiss cheese is melted and bubbly.
  11. Let the soup cool for 2 minutes before serving. Serve hot with the remaining garlic bread on the side.
