Magaricz Recipe

Ingredients
- cup olive oil
- 1 large eggplant, peeled and coarsely chopped
- 1 medium red bell pepper, cut into thin strips
- 1 green bell pepper, cut into thin strips
- 1 large onion, diced
- 1 cup coarsely shredded carrot
- Salt to taste
- Crushed red pepper flakes
Directions
- Place the eggplant in a colander, lightly salt it, and leave it to drain for about 45 minutes.
- While the eggplant is draining, heat the olive oil in a large skillet over medium-high heat.
- Add the eggplant, red and green bell peppers, onion, and shredded carrot to the skillet. Stir well to coat everything in the olive oil.
- Reduce the heat to low and cook the mixture for 40 minutes, stirring occasionally. The vegetables should soften and the mixture should thicken to a coarse jam-like consistency.
- Season the relish with salt and crushed red pepper flakes to taste.
- Once cooked, cover the skillet and let the relish chill in the refrigerator for at least 1 hour.
- Serve the chilled relish as a condiment with your favorite bread or crackers.
