Ingredients

  • cup olive oil
  • 1 large eggplant, peeled and coarsely chopped
  • 1 medium red bell pepper, cut into thin strips
  • 1 green bell pepper, cut into thin strips
  • 1 large onion, diced
  • 1 cup coarsely shredded carrot
  • Salt to taste
  • Crushed red pepper flakes

Directions

  1. Place the eggplant in a colander, lightly salt it, and leave it to drain for about 45 minutes.
  2. While the eggplant is draining, heat the olive oil in a large skillet over medium-high heat.
  3. Add the eggplant, red and green bell peppers, onion, and shredded carrot to the skillet. Stir well to coat everything in the olive oil.
  4. Reduce the heat to low and cook the mixture for 40 minutes, stirring occasionally. The vegetables should soften and the mixture should thicken to a coarse jam-like consistency.
  5. Season the relish with salt and crushed red pepper flakes to taste.
  6. Once cooked, cover the skillet and let the relish chill in the refrigerator for at least 1 hour.
  7. Serve the chilled relish as a condiment with your favorite bread or crackers.
